    does bread pudding have to have mixed fruit in it?

    thanks for that! I have just made it and put it in the oven - will let you know how it comes out - the mixture certainly tasted good! fingers crossed!

    I'm dont think so, I have found various different recipes, some with sultanas, some made with milk, others with water! maybe its a case of try it and see, I'm currently trying Mschappie's recipe.

    Sorry forgot to come back and report on bread pudding:

    Very nice indeed, DH loved it, infact its all gone, got to make a bigger batch next time! thanks.

    Also I'm gonna try a couple of other recipes, some have milk, some have suet in, but I wanted to try this one first as its made with water, which is the cheapest version - and very nice it is too! :j
  • Feeling very OS, instead of sending the remains of a stale HM loaf to the birds I thought I'd make bread pudding - I've never made it before but I do like it. :D

    The only recipe I had was from a 50's book which went along the lines of: soak bread in water; squeeze out excess; add currents, mixed peel, sugar, allspice, 1 egg and 2oz suet. Bake for 1hr at gas 3 until firm and brown.

    It wasn't at all how I remember it. :( The mixed peel was overpowering but there also seemed to be a kind of funny 'after texture'. A bit hard to explain but almost like it was leaving some kind of residue in my mouth afterwards, almost fatty.

    I've looked at the recipes in the index thread and none of them seem to include suet. Would this be what was leaving the funny texture? I'd like to try again and win hubby around (he'd never had any before and this put him off).

    Never heard of suet in a bread pudding. When I was small and didn't like dried fruit my mum made her bread pudding with jam sandwiches, pour over egg and milk and bake in oven. Yum.
  • See that seems to be along the lines of bread and butter pudding which I didn't want. I do wonder if it would be nicer soaking the bread in milk rather than water though. :confused:

    http://www.deliaonline.com/recipes/spiced-bread-pudding-with-brandy-cream,1589,RC.html This is Delias bread pudding (not bread and butter pudding - different beastie) - although it has added brandy, I think you could leave it out to be O/S - it uses milk and butter for the fat content - I've used a very similar recipe from her book, and it's wonderful, fudgey and moist - lovely!

    Bread pudding is different to bread and butter pudding.

    Its made with bread cumbs, mixed dried fruit, milk, black treacle, suet and eggs.

    Its a bit like a heavy doughy cake.

  • LOL now I'm confused. Delia's method was pretty much like mine but without marinating the fruit, and not adding butter.

    Riki: My recipe didn't have any treacle in it and said to only add a dash of milk if it's too dry (which it wasn't). So should it have suet traditionally then? If I were to leave the suet out would I need to replace with some other fat like the butter in Delia's or would I not need it?

    I definitely didn't want bread and butter pudding (nice as it is) because I wanted to cut it up and take it cold to work - like how I buy it at the bakers.

    I think I may just try again with a completely different recipe!
