Lettuce soup is yummy on warm evenings. What sort of lettuce is it? More like iceberg or romaine? If it's the "meatier" stuff like romaine, you can use it as a green in cooked dishes, just be gentle with it (it doesn't need as much cooking as, for example, cabbage). If it's iceberg I think your options are just soup or salad!
I was wondering about lettuce soup but can't find a thread on it :)

  • Have some tacos, with a bit of mince, spice and grated cheese - with lots of shredded lettuce?

The French serve braised lettuce with garden peas. Some of the very flimsy floppy lettuce leaves aren't quite so suitable but any robust salad leaf with a little more firmness in it will do very well, Just roughly shred the lettuce, throw in with the cooking peas for the last minute or so until it has wilted, drain, stir up together and serve.
