The French apparently have steamed peas with steamed lettuce.
I like to shred it and add as a topping to one of my storecupboard comfort food standbys:-
Ingredients
Tortilla chips
small tin of refried beans (found in mexican/world foods aisle in supermarket - think fajita kits etc)
grated cheese
shredded lettuce
Place chips in a shallow dish, spoon beans onto chips, add grated cheese and place in hot oven for 15 mins or depending on how crispy you want your cheese.
Add loads and loads of shredded lettuce - you really need it to cut through the richness of everything else
I really hope someone tries this as it is lovely (IMHO :rotfl: )

You can make lettuce soup by following a watercress soup recipe and replacing watercress with lettuce. I was doubtful initially but it is delicious. The lettuce definitely adds flavour, though the taste is quite different once cooked.0

Hi there, I posted this recipe a while back, its a really nice soup,
Chop a lettuce up
dice an onion
dissolve a ham stock cube in 3/4pint hot water
simmer everthing till soft
looks disgusting at this stage, like a pond!
pour a drained tin of peas in pan, then simmer for 5 mins
cool slightly then whiz with stick blender
Tastes like pea n ham soup.”Pour yourself a drink, (tea for me now)
Put on some lipstick
and pull yourself together”

Thanks everyone, I will definitely try the lettuce soup, and the storecupboard nachos sound lovely but will have to wait till after we come back from holiday (am dieting for my bikini!).
I've tried braising little gems but these ones are large and rather floppy, I'm not sure they'd work, but I guess I could try it - if the lettuce is going to waste I'm not losing anything!That man is richest whose pleasures are cheapest. Henry David Thoreau0 -
Another idea is the indian lettuce pakora - I think a traditional dish at Eid. Make a batter (my friend uses gram flour but I have got away with ordinary flour for onion pakora) add any apices you fancy - chilli is good - combine and deepfry. Best eaten fresh when hot.0

I ordered my groceries on line and have ended up with 4 lettuces by mistake. Only me and my daughter eat lettuce and you can only eat so much. So what would you do with 4 lettuces?0

Uses
1. Salad
2. Use the lettuce leaf as a wrap and stuff with a filling of your choice
3. I believe you can make a lettuce soup to be served cold, but don't take my word on this
4. Feed the rabbits:rolleyes:
5. Make salad sarnies to take to work - pack lunches for school
6. Force the rest of the family to eat it:D

Hi - peas and lettuce is delicious. Just put some frozen peas in a saucepan with just dash of water and a knob of butter, salt and pepper. Bring to the boil and add your lettuce and stick the lid on. Simmer for a few minutes until the lettuce wilts down like spinach - you can put loads on because it wilts right down. If it is a very crunchy lettuce like romaine it might take longer. If it is a floppy round lettuce it will probably take less. Serve with any juice because that tastes good too. The lettuce seems to bring outthe sweetness of the peas.0
