Thanks everyone. I was going to make lettuce soup today but my husband insisted on a takeaway. I think I will make it tomorrow and keep quiet.

I used to like lemon chicken on a bed of lettuce.
I think I read somewhere that lettuce is nutritionally quite poor. Hope that helps someone who hates the stuff and thinks they should eat it because it's 'good for them'! LOLMay all your dots fall silently to the ground.0 -
Traditionally served on a bed of lettuce, you can either buy it ready made and plonk it on the shredded lettuce, or make the whole thing yourself. Marie Rose Sauce is 50/50 mayonnaise and Tomato Sauce, mix in some prawns, shred some lettuce, pop the prawn mixture on top, et voila ! I know it was in jest - but can I say that DON'T feed your rabbit lettuce (or cabbage or brussel sprouts, cauliflower of brocolli) - its really bad for them, and they could die from severe enteritis!0

I had this problem a couple of years back and then I found *Lettuce Soup*.
It's not too bad. Sounds worse than it tastes and I froze some etc. Better than tossing them out. I gave away heaps too.

but not lettuce as I'm not a fan of lettuce soup. I just use the lettuce leaves in a general veg soup. Fave is box of those supercheap dried peas that you leave to soak overnight. Costs about 40 per box. I drain those off, put the peas, lettuce leaves, chopped onion and some veggie stock cubes, water in and boil and then blend. Makes really nice pea soup.
Also, you can use lettuce leaves like you would spinach, i.e. wilted for stir fries etc.0 -

Lettuce & tarrgon soup is much nicer than it sounds!!
Also...if you have quite a firm lettuce, you can BBQ them quite nicely. Cut them in half, brush the cut side with oil, season, cook with cut side down. I normally add a honey & mustard dressing over the top...yum!0
