For the first time in God knows how long my lunch, is not a sandwich! Vegetable fried rice sprinkled with smoked mackerel flakes (left over from last night's dinner) and eggplant omelet (grilled eggplant, skin removed, flattened, dipped in egg and shallow fried). Yummy and very filling. A lucky coincidence as I might need to stay longer at work to cover a colleague who is off sick. Easy peelers for dessert. Good morning/noon fellow LTWers. My shift was changed today to cover a colleague who is off sick. I'm doing 3-11pm instead of 9-5pm. The good thing is, I managed to have a bit of a lie in.
Been busy in the kitchen since I got up. Cooked lunch and dinner for the family - mung bean patties (cooked with little or no oil) and vegetable egg fried rice. I've had a bit for my lunch and will pack a little bit for my dinner at work 7pm. For my afternoon break at work, I will have coffee and grapes and honey dew melon.

Sorry I've been missing in action...so busy at work I haven't had a chance to come here and update.....and I haven't kept track either.
I can remember at least
1 cheese and tomato sandwich
1 prawn salad
Hummus and pita 2 days running
all usually accompanied by some fruit and occasionally a bag or crisps
I was on 3/12 so I'm at least 7/12 now....I'll come back and edit if I think of any more.0 -

4 LTW days this week plus a free lunch yesterday, happy with that! Also DD took packed lunch every day, I'm estimating I've saved a good £30 this week!0
