This one is neat and includes all cables at a reasonable price < £20

I've bought a couple in past, no problems with them

That will work, assuming the new computer has a VGA graphics output, which it looks like it does. I've had one for a year or two, and it switches between the two system units it's connected to with no trouble at all.

Ideally, transfer the CS5 licence to the new PC and use that.

If you want to keep XP connected to your local network, but shielded from the Internet, run this in a command prompt:
    route delete 0.0.0.0 mask 0.0.0.0

If necessary, you can use this to restore Internet access (where 192.168.1.254 is your router):
    route add 0.0.0.0 mask 0.0.0.0 192.168.1.254

And then, you can use Remote Desktop (or Teamviewer) to access the XP machine from your new PC: http://support.microsoft.com/en-gb/kb/315328
