Thank you all for your kind comments, sorry to bring the thread down.
So I did what I always do when I'm upset, I cooked, I made a huge pan of vegetarian curry, my L&M doesn't like curry and isn't keen on vegetables but he is on the late shift next week so won't want an evening meal.
So it will do my evening meals next week, I've cooked the rice to go with it and it's in packs ready to go in the freezer.
Now the house stinks of curry and it's too cold to open the windows!
I'm also supposed to be emptying the freezer, not filling it up, hey ho, I emptied the fridge and cupboard to make the curry.Chin up, Titus out.0 -
Westcoastscot - my marzipan apple tart comes in many guises depending on time and cupboard stocks. It's a concoction really but really tasty. The original recipe came from a copy of Family Circle in the 60's with what to do with leftover marzipan (?) Here goes.
Packet of shortcrust pastry to line a flan dish (I use a 12inch one)
A packet of marzipan rolled out to fit the base of the pastry
Cover the marzipan with sliced apple ( I use sharp eaters from my garden that I've frozen without sugar) but an uncooked cooker or two will be fine. Glaze the apples with some apricot jam and bake in the centre of the oven Gas 4 (sorry don't have the conversion) not sure how long it takes as I just keep checking until it looks OK.
If I'm being very posh or indulgent instead of the glaze I top it with a ground almond mix. The proportions are 2oz of butter, caster sugar and ground almonds to I egg. For this size flan I would do 4oz proportions and spread over the top of the apples - again, same temp until it looks nice and brown all over.
Hope this is understandable as my cooking is a bit 'Swedish Chef'Small victories - sometimes they are all you can hope for but sometimes they are all you need - be kinder than necessary, for everyone you meet is fighting some kind of battle0 -

We just curried up a storm here too Hester.... conversely it's too hot and humid to open the windows here!
Today we fixed the back fence and measured up and ordered the remaining skirting and architrave. Not much done this weekend, but it's something at least.Softstuff- Officially better than 0070 -
Silvasava thank you - it makes perfect sense, as I always have to alter things to make them vegan for youngest! Sounds lovely! We have a kind-of bakewell that we love, and marzipan is a fav so shall have a go with what I have to hand
Weather dreich here but not desperately cold - to be honest would prefer it colder it might be a bit drier and brighter!
Mar read on another thread, knitting I think, your comment about exercise and totally agree - my physio says that part of my tiredness stems from not getting enough exercise and although she emphasises with the vicious circle that fatigue brings, she really does advocate very little but daily and assures me I shall see a difference. I was walking around the block everyday before Christmas but haven't yet resumed the habit. Can't say it made me feel physically better, but it did make me feel brighter.
Trying to decide whether to train up and put myself forward for a promotion, which would be more money but more hours. Wish I **knew** how my arthritis was going to be in the near/far future. A little bit of me wonders if I would be better working a little more, as I pretty much forget about it when I'm at work, unless I sit or stand for too long. I have 10 years left to work - any thoughts anyone????0 -
So I picked off a bit of green mould from the last bagel, toasted it, opened the tub of cream cheese, scraped off the green bit and spread the rest on my bagel.
