  • Thiftmonster, I've never heard of curry with yorkshire pudding, but that does sound nice.

    The chutney and blackberry and apple jelly are finished. Everything is in small quantities this year, but this is the first year I'd made different things in the same year so I chalk that up to progress! I didn't find anything at the market this morning, but I did pop into the large Asda nearby and got a few things that are difficult to find locally.

    I'm exhausted now and can't seem to find the energy to start my next project.

    FPk that Italian thing looks nice! The moussaka looks good, like shepherds pie. I'm hungry now. Re augergines I suppose the only way to find out is to live dangerously here as well and try one! Likewise with avocadoes. I would need to check if they were any good for the RV's LC diet first, then make him eat them first and see what happens :D

    Actually, having checked Mr Stein, there are sliced potatoes too. It's quite time consuming to make, and we split the tasks to save time (I did the ragu, DH sliced & fried off the veg), but it is well worth the effort - the recipe made enough for 8 portions & reheats wonderfully in the microwave!

  • Mar, aubergines have been used for ages as a good addition to the diet of diabetics, so look them up and see if they'll be ok for him and have a go!

    I will say that in most recipes these days you can safely skip any step requiring you to salt them and let them sit to 'draw out bitter juices' before you start cooking. Some people still do this, but there aren't any bitter juices in the ones you get in supermarkets and most of the fancy chefs don't do it these days so I don't either.
  • p.s. the Italian thing is super easy and my OH will eat anything with melted cheese involved.
  • FairyPrincess- I had it in a pub in Skipton the first time-one of those platesize yorkies filled with chicken curry. I invested in 4 sandwich tins that we keep just for making yorkies and a family favourite was born!

  • I make moussaka with half aubergine and half potatoes so that there isn't too much of the purple stuff for rest of the family. I grill the aubergine instead of frying it to cut down on the calories.

    I microwave the aubergines. I also make a courgette lasagne using length way slices instead of pasta, low fat mince, lots of veg and a sauce made with skimmed milk and cornflour and a little low fat cheese.

    I'll add that to the to-do list Floss. I fell in love with Mr Stein thanks to his India book. It's his fault I have 30 different spices in the cupboard :rotfl:

    I know that feeling! We blame going to see & smell the Hairy Bikers a few years at the Grand Theatre...good job we'd eaten before we went! Next time we meet up I will show you a pic of our spice drawer :o:p
