    LL is bound to bounce between being so excited about his trip, and really sorry to leave you, but you are prepared, and you'll be able to handle it. When DD went to my parents' in Portugal for a month last summer she was the same. I had to be very upbeat about it all but inside i just wanted to hug her and not let go. I cried after she'd gone, but not before, and certainly not while she was there. Luckily I'd got lots on to take my mind off it all, I was having treatment for skin cancer at the time and had just started a new job too. But I did miss her dreadfully, and no doubt you'll miss LL too. Plan some fun stuff while he's away, some adult stuff you wouldn't be able to do while he's around. You know all this already of course, so I'm sorry if I'm preaching to the choir ;)

    Had a nice afternoon with LL - we ventured a little further afield than usual and happened upon a nice lake/park area with a kids playground but also plenty of running around space for Oscar and some woodland walk too. We took some tuna sarnies and pringles from home and the sun was out a fair bit :) Hope now and doing a few more chores before we start to make some home-made chicken nuggets for tea, with the recipe someone gave me on here with the cornflake coating - I'm sure LL will enjoy doing it in the messiest possible way :) - Jacket potatoes with them, with a cheese and bacon topping. xx

    Here you go Becs! It is roughly like this give or take the odd preference:

    Ingredients:
    1 pound boneless, skinless chicken breasts, cut into 2-inch chunks
    1/2 cup nonfat plain yogurt
    Cooking spray
    2 cups crushed corn flakes
    2 tablespoons chopped parsley
    1/2 teaspoon salt
    1/2 teaspoon freshly ground white pepper
    Preheat oven to 375°F. Put chicken and yogurt in a medium bowl, toss to coat, cover and chill for 1 hour.

    Grease a large baking sheet with cooking spray; set aside. Put corn flakes, parsley, salt and pepper into a large, resealable plastic bag and shake to combine. Working with a few pieces at a time, drop chicken into bag, seal and shake to coat; transfer chicken to prepared baking sheet as done.

    Bake chicken until crunchy on the outside and cooked through, about 25 minutes.

    (We like to smash the cornflakes up by whacking the plastic bag against the counter. LL also likes to roll them in to the coating manually with his hands). :)

    I've resisted so far. Am about to melt some cheese over cauliflower and broccoli and have it with some salmon :D and would you believe THAT will make me skinny? Along with the pork scratchings I had earlier, the giant mushroom omelette and the jalapeño popper. This diet rules. ;) xxx

    I like the chicken nugget recipe. Aren't they a bit sweet with the cornflakes?! Maybe Jelly would like that. With bun earrings. :rotfl: xxx
