So I would looking at breather pipes for place to start looking for splits and brakes and replacing them where they are split and broken or clips missing (breather hoses in the same diameter can be bought from motor factors if they have stock).
I would also be looking at the EGR valve and the MAF sensor (mass air flow sensor usually inline with the induction air pipe).
I personally think the empty coollant bottle is a red herring, especially if doesn't lose any more water after refilling and a good drive and if it was water it would be thick white billows of exhaust cloud not grey. But running out of water is still a bad thing sometimes.
I would check the oil filler cap for emulsified oil (mayo type sludge) although its not often white its like a light brown sludge not dark black oil if its light brown sludge like or signs of gone off yogurt get it in the garage asap it could be that The santa fe suffers with oil cooler problems, that can give headgasget type symptoms.
You do need to book it into the garage I list the above as possible causes only to give you an idea what it maybe so your not in the dark.
so to recap
the simplest and cheapest would be a split breather or induction pipe.
Maf would be next as the sensors are pretty common to go.
Egr would be next as they are another to get blocked up if it is a EGR valve
EDIT TO ADD.
it wouldnt harm it to buy some diesel injector cleaner and run that through on a full tank of diesel and run it till its almost empty just to give the injectors a clean to be sure they are not partially blocked. I use the wynns diesel injector cleaner, but theres many others of similar type.0 -
Head gaskets can and do fail without oil and water mixing, the water gets drawn in to the piston on induction cycle and causes steam out of the exhaust.
I certainly would not say it supping all the water is a red herring, more of a big clue, where is it going ?
Mark the expansion bottle and see if it is still supping the Water, if is then there is a clue, unless the magic water fairies are drinking it.I do Contracts, all day every day.0 -

The santa fe can consume allot of water if its used for towing as my aunt discovered (hers is auto) 2008 model and transmission temps go up so does the consumption. over 12000miles of towing (she had a business that involved moving around allot of chair covers for parties and weddings etc) used almost all of the water in its tiny water expansion bottle as the transmission get quite hot ive seen it go upto 110degree's using my scan tool on steep hills.0 -

Could be the turbo.
Which would explain the loss of oil, they often take the oil seal with it and leak oil out the exhaust.
Coolant loss - could be different problem. Doesn't usually result in loss of power, just overheating which causes its own problems.0 -
The coolant loss and white smoke out the back sound like a head gasket.
Is there a rise in temperature as well?0 -

The car does not overheat at all. I did notice that the engine looks like there is oil over it, where as before it was very clean, not sure if that indicates something.0
