    Ive got the HD cookbook too, but its one I haven't used! I never seem to have all of the ingredients! Ive started adding a couple of ingredients to my online shop as per someone's suggestion earlier (I forgot who! Im sorry!) but thank you! I do like the look of the Fish Pie with leeky mash...

    Absolutely I will post either later or by the end of the weekend. I've also cooked the Acapulco chicken a long time ago and loved it. I tend to steer clear of chilli for family meals as my son isn't fond, how spicy is it, I can't remember. I've never tried the tortilla cheesecake though, maybe I should.

    Tonight I made the Beef goulash from the second Hairy Dieters book. The sauce was a bit thin for my likeing but that was probably because I made it in the slow cooker. Very tasty dish that I would make again .

    I need to meal plan for next week and will look at the HD book three as I have only made the Caribbean chicken curry out of this one so far.
    I am playing all of the right notes just not necessarily in the right order :D.

    Thanks KDF, not in any rush.

    You can make the Acapulco chicken as hot as you like. I use mild chilli powder cos I don't like it too hot.

    My son used to love the tortilla cheesecake and he's not a veg lover. I used to use tinned veg cos I didn't have a freezer at the time. It was tastey and cheap.

    I made a root veg crumble on Monday, made enough for 2 days for OH and I, and it was yummy and very filling, will definitely be making that again. The best part was I didn't have to buy anything for it, as I just used up ingredients I already had, parsnips from Christmas, some swede I had in the freezer, carrots and potato. I was going to put in some sweet potato, but when I got it out of the fridge it had gone mouldy, so that went in the green waste bin to go for composting.

    lilahoo as promised the HD book 3 Caribbean chicken curry.

    8 bone in chicken thighs skinned and trimmed of fat
    11/2 lime
    1tbspn veg oil
    300ml chicken stock or water
    1 large sprig of thyme and 2 bay leaves
    200g pumpkin diced (I subbed with butternut squash)
    1 large potato diced
    100g pineapple diced
    1 tsp rum (optional)
    2 spring onions finely sliced
    2 tbsp chopped parsley
    salt and pepper

    Curry paste
    1onion roughly chopped
    4 garlic cloves halved
    15g chunk fresh root ginger
    2 Scotch bonnet peppers de-seeded and finely chopped ( I omitted this)
    2 tbsp medium curry powder preferably Caribbean
    1/2 tsp ground allspice

    Add juice of 1 lime and 100mls water to the chicken in a bowl.

    Blitz the ingredients for the curry paste until fairly smooth.

    Heat the oil, add the curry paste and fry for 2 minutes stirring constantly. Add the chicken, season and stir to coat the chicken add the chicken stock (or water), thyme and bay.

    Bring the mixture to the boil then simmer covered for 45min. Add the pumpkin, potato and pineapple, cook for 30min covered. Add the juice of the remaining 1/2 lime and the rum. Cook uncovered for 10 min to reduce the sauce. Serve sprinkled with the parsley and spring onion.

    Serves 4

    290 calories.

    I tried to make the curry leaf and lemon rice from Plenty More but I had a small disaster! Making half the full amount, I was meant to use 2and a half cinnamon sticks but I only had ground, so I put a teaspoon in. Waaaaay to much.

    It isn't bad, but I can't taste the lemon or curry leaves!

    Last night, as a treat, we had Baked Camembert Pasta from Jamie's Ministry of Food. Blimey it was tasty - even though I could feel my arteries furring up as I ate it! I made it with wholemeal pasta just to try to make it a little bit healthier (and we had it with a salad) but if you love cheese, you'll love this! It's definitely one to make again in the future but I think I'll wait at least a year before I try it again!

    As I'm on a soft diet, I had to hit the recipe books for inspiration and came up with a red lentil Dahl and a Persian aubergine dish both from the hairy bikers curry book. Both absolutely delish and cheap as chips. Had some of the left overs for lunch today cold,served with hot pittas and just as nice
