I'm doing a hairy bikers healthy cottage pie today although I won't be eating it until after work tomorrow.
Been rifling through Jamie Oliver's ministry of food this morning so will see what I can spot in there.
Also, my brother in law got me a 'one mix, 100 cakes' book last year and ive only made one thing from it so I'll pick something from that to make before I head to the shops this morning.CC1: £4481.14/ £5031.14 (12% paid off, £600) | CC2:£3307/ £3807 (14.4% paid off, £550) | Loan: £10,528.20/ £15,792.30((33% paid off, £5,264))

I did the Hairy Dieters cottage pie 2 weeks ago. It was nice and froze well. Had the last portion this week.
This week I cooked a caramelised red onion and sausage tart tatin from a Three/Four Ingredient Cookbook. Very easy mid week meal.0 -
Last night, as a treat, we had Baked Camembert Pasta from Jamie's Ministry of Food. Blimey it was tasty - even though I could feel my arteries furring up as I ate it! I made it with wholemeal pasta just to try to make it a little bit healthier (and we had it with a salad) but if you love cheese, you'll love this! It's definitely one to make again in the future but I think I'll wait at least a year before I try it again! You're not your * could have not of * Debt not dept *0

Well after a disaster earlier when I got out the planned liver for liver, onions and mash - turned out the liver had gone off.
Scrambled for the freezer and the only thing that could easily and quickly be defrosted was some pork mince.
Out came "Might Mince Cookbook" by Jane Todd ( a very 80's book inherited from my mother) and I'm making Frickadeller (minus the veal). Making a tomato sauce and serving with pasta. You're not your * could have not of * Debt not dept *0 -
I have also set myself another mini challenge within this one!
I need to stop buying veg out of season where I can. I have no excuse as I have a slow cooker book for the seasons and a readers digest massive tome The Cookery Year Book. So once a month one of those is the cook book I must use! You're not your * could have not of * Debt not dept *0 -
Trying 3 more recipes from the Hairy Dieters book 3 this week.
Started with the Beef plate pie but substituted the minced beef for minced lamb and the turnip for parsnip. I have never made pastry that had potato in it before and was pleasantly surprised with it. The crispy bits of the pastry left on the edge of the dish were worth fighting the kids for.
Today I made the pot roast pork with cider and apples. I did make it in the slow cooker though as we were out this afternoon. I omitted the garlic as I have a few meetings tomorrow and did not want garlic breath.
Later in the week I will be making HD lamb burgers with tzatziki. Will let you know how it goes.I am playing all of the right notes just not necessarily in the right order.

They sound lovely. I'll be interested to hear how the lamb burgers go. I made some lamb burgers at the weekend from the Ginger Pig cookbook. They were lovely, really moist tasty. I then made a HM tzatziki using a recipe from woman's own website to accompany it.
I have several lamb burger recipes, and find it interesting cooking them all and finding which one we like the best. Research is very much in progress
Over the next week or so I hope to cook several meals from Rachel Allen's Easy meals cookbook, as well as continuing my exploration of the Ginger Pig cookbook.0 -
Hi KDF
Could you post the receipe for the chicken Korma please. I used to cook this alot but my son has mislaid my copy. It was so simple and tastey.
Our other favourites from that book are Acapulco chicken and the tortilla cheesecake. For some reason I can remember them!
Hi Lilahloo
Sorry this has taken me a while
1 tbsp oil
1 onion roughly chopped
350ml natural yoghurt
200ml double cream
25g butter
1/2 tsp salt
1 tsp turmeric
2 tsp hot chilli powder - I usually use 1 to suit my 7 year old, to be honest I think 2 could be too much
3 garlic cloves, crushed
3 tbsp ground almonds
4 x 100g chicken breasts, each breast cut into 6 pieces
Toasted flaked almonds and coriander to garnish
Preheat the oven to 200 degrees C
Heat the oil and fry the onions for 5 mins until soft. Place the onion in a food processor with the yoghurt, cream, turmeric, butter, salt, chilli, garlic and almonds and whizz until blended.
Arrange the chicken in a greased casserole dish and pour over the sauce. Bake for 30 mins until the chicken is cooked. Garnish with almonds and coriander and serve with rice / naans etc
As I've made this so many times I'm a lot more relaxed about measuring the cream and often make up a little extra so I can add extra chicken. I usually cook it slightly longer too.0 -
Hi all,
Last week I made these monster cookie bars topped with M&Ms. The recipe is from an American cooking blog I follow (Mel's Kitchen Cafe). It's the first recipe I've made from there and I would definitely make them again. They are gluten free if you use gluten free oats.
I didn't have quick oats only regular rolled, so I whizzed mine in the processor. When I added them to the mix it became very thick and was hard to spread out in the tin. I posted on the blog to ask if this was normal and Mel replied that I may have whizzed my oats too much, so I will consider for next time. However they baked just fine!
They were delicious and well received by a group of 7 and 8 year olds after a swimming lesson as they are filling. This included one individual who is gluten intolerant. Link is below

I also made Delia's carrot and coriander soup from her Soup book, it's an old recipe I've not made for a whole and was as good as I remember it although I always find little bits of coriander seed not as small as I'd like remain after blending with a stick blender. Any ideas anyone? I suppose I should try a regular blender.
Happy cooking all

S-Iam have just had the l lamb burgers and they were very moist. I did not add the garlic as I have a couple of meetings tomorrow morning and I think that it would boot the flavour a little. The tzatziki was also nice but would have been even better with the garlic.
I made the HD tomato soup y yesterday. That was lovely but I think that there is so much other veg in it that calling it tomato soup is a bit of a stretch.I am playing all of the right notes just not necessarily in the right order.
