My question is what will happen if I send them a letter of denial - something like 'any liabilities is denied'....0 -

nothing as you were caught by a security guard and will most likely be on security CCTV, so how can you deny liability. you admitted on here you took 2 items and paid for 1 item.

I would follow the advice given to the person in the link that was posted....They gave an update three months later saying they haven't recieved any further contact.
send them something along the lines of;Dear Sirs
I refer to your letter dated xxxxxx.
Any liability to your client is denied. No further correspondence will be entered into.
Yours etc.

It's quite embarrassing at how badly you've failed to understand what the OP's original question was concerning. You're conflating the criminal action of theft (which it seems has not been pursued) and the civil action that the security team are attempting to pursue in order to line their pockets.
Next time read the thread properly to gain an understanding of it - ask an Adult if you need help doing so.0 -
