Oooh, I have a recipe for chicken kebabs if it's any good to you.
I use thighs or any chicken on offer, cut it into chunks like it's for a skewer and then marinate it for however long I have with 2 parts cumin, 2 part coriander, 1 part thyme, 1 part sage, 1 part garlic salt, 1 part black pepper, a crushed garlic clove and 1/2 part chilli powder (more if you like it hot). Spray the coated chicken with oil or frylight, just to help it cling.
I use parts because I don't know how much chicken you want to make but those are the proportions.
Anyway, after marinating, use a griddle pan or a very hot dry frying pan and cook the chunks of chicken, trying to blacken little areas. Then serve it with a salad, pitta bread (18p for 6 from Mr T's) and if you fancy, some garlic mayo/yoghurt. It's quite good to just slap all the parts onto the table for people to assemble.

I have a great Thai green curry noodle recipe, depending on how many are eating you may have to double it/add 50% of everything, these amounts fed 3/4...
Soften a large sliced onion in a pan, add some diced chicken and a couple of tablespoons of Thai green curry paste and cook until browned. Make up a can of coconut milk to 1 pint with chicken stock, pour over and bring to the boil. Add half a pack of medium egg noodles then cover and simmer for about 8 minutes (stirring occasionally.) If you are going for the ready made sauce (which I probably would) and you have M&S near by, get theirs. Often on offer £1 for a jar... otherwise £1.60 or £1.70 I think, well worth the money though and chances are they won't know that.

Hi all
Ive got some leftover chicken from yesterdays roast, also in fridge theres half a carton of natural yoghurt, ive got indian spices and chopped tomatoes, how do i make all this into a mild curry ?

Pop the tin tomatoes,2 cloves garlic & 1 onion into a food processor,whiz to a paste.Fry off the spices in a dry pan for around 30seconds & then grind them,meanwhile fry off the onion paste,add the spices & simmer,add the chicken & the yoghurt before serving to warm thru..
Job jobbed.

Hi Bella,
Gently fry onions and other veg you want to put into the curry, I normally use peppers and/or mushrooms, in a little vegetable oil. Add the spices you want to use, stir in and fry for another couple of minutes. Add the tinned tomatoes and top up with stock and simmer until the veg are almost cooked. Use slaked cornflour (cornflour mixed in a little cold water) to thicken the sauce if it needs it. Next add your pre-cooked chicken and and heat gently until the chicken is hot. If I'm using cooked chicken I always add it towards the end of cooking as if you add it too early it can become dry and stringy. Finally stir in the yoghurt just before serving. If you have any, creamed coconut is great stirred in too and gives a lovely sweetness to mild currys.
