    I would like to start making my own curry to go with rice following the success of my 1st time h/m pizza. Sorry I cant find the recipe thread. Does anyone have any nice recipes which dont have loads of ingrediants please. We like korma types but also jalfrezee and hot currys too.

    what have you got?

    i use as a base, onion, celery, garlic, ginger.

    then according to what i fancy, i might add vegetables or chicken, stock or tinned toms, sugar or hot or mild curry powder. its always better if i use individual spices, but sometimes i cant be bothered and just chuck in garam masala or 'curry powder'. plus dried coriander, (add the fresh stuff at the end rather than during the cooking), you might want to add fresh chilli if you like heat

    then you might want a creamy curry so add coconut milk

    with curry, i find the longer, slower cooking means the flavours meld together better and you get better depth of flavour, dont boil with coconut milk in though or it might split and become oily

    keep tasting. i often bung any old thing in, pickle is a good one with curry for a sweet but tangy effect

    I've just been informed that I'm supposed to be going to someone's house tonight, for a kind of casual party.

    Usually, the hosts (about four of the people all live together) make a prawn curry for everyone who stays...but I hate prawns. I don't want to be difficult and mention it, so instead I was volunteered to cook...

    I can make a mean spag bol but they don't eat beef, and that's about the limit of my cooking ability.

    I'll need to go and get the ingredients myself today, and won't get time to practise...has anyone got an easy but tasty chicken curry recipe?

    It's not a truly OS solution but I'd get a jar of ready-made curry paste - Patak's ones are good - rather than making it completely from scratch - apart from anything else it saves you having to buy a load of spices you might never use again.

    All you'd need to do then is buy chicken (I'd go for boneless thigh rather than breast), onions and tinned tomatoes and follow the recipe on the jar. My made-from-scratch curries have never been a great success so I now tend to make curry this way and the results are usually very good. (And some Indian takeaway places use them, too - I used to live above one and could see the jars of pastes in the kitchen and it made me smile when friends said how good the curries from there were ;)).

    I would agree with CCP. Today is not the time to stress yourself trying to make a new recipe.
    If you are doing rice too, do it the 'failsafe' way.
    1 Heat a little oil in a saucepan, add basmati rice (say 2 cups for 4 people) give it a wee stir around while the kettle boils and then add almost twice as much water as rice. So, for 2 cups rice, add 3 3/4 cups boiling water and some salt.
    2 Stir once.
    3 Put on lowest heat.
    4 Put lid on.
    5 Don't touch for 20 mins.

    Result? Perfect non-sticky rice every time! BTW, only works if you use basmati. Buy cheapest you can get.

    Hi ele you could always stick with what you know and make your spag bol but use quorn, turkey or pork mince insteadl

  • I second lollyfin, do spag bol but with chicken or a veggie version with quorn or just lots of veggies.

    I do a quick but very tasty bacon wrapped chicken, just buy a breast for each person slice down one side and put in some philly cheese any flavour you like, wrap the breasts in bacon strips and back for half an hour or till cooked through.. serve with either rice or veg or both if you're hungry..
