    I tend to make plenty of homemade burgers, chicken nuggets (really easy to do), breaded chicken thighs (kfc stlye) dished up with either risotto, chips, boiled potatoes and salad, oh and not forgetting the coleslaw.

    I actually made plaice goujons (for the first time) on saturday evening to go with our seafood platter, i must admit they were perfect!

    Another of our favorites is chicken kievs.

    Do you eat pasta, if so, you could always do a chicken sauce to go over the pasta and add mushrooms or sweetcorn (if you like them).

    Not sure if that helps at all, but what i've listed is really easy to make.

    We tend to eat a lot more salads, barbeques, open sandwiches, quiche, etc.

    There's an earlier thread that should give you some inspiration so I've added your thread to it to keep the suggestions together.

    This is brilliant - thanks for this, I've never come across this Thread before, going to read through it now and make notes of any new recipes etc and then I'll add on any suggestions I may have.;)

    Some good ideas on here - only one I can think of from the top of my head is this Russian Salad, will have a think overnight and add any more tomorrow.

    Hi guys,

    I was wondering how your menus change in summer or whether you stick to the same foods.

    Generally in summer I find it much more difficult as I dont fancy stodgy meals and want something lighter, but OH wont eat salads or many veg based things. We also try to avoid dairy such as dairy or cream sauces, and pasta. Im not sure where to start!

    For example this week to use in the freezer I have a chicken and veg soup, stewing steak, venison pieces, and sausages for sausage and mash. I also the staples of various fish, turkey mince, turkey steaks and chicken thighs.

    I also find summer food is more costly, how do I eat summery, keep healthy, satisfy myself and the OH and stick to a budget?!

    Any tips appreciated, thank you

    We eat quite a lot of stir fries in the summer with either chicken or beef.

    How about flavoured cous cous with some of the chicken and some salad leaves - I know you said OH won't eat salad but if you chop it all up with the cous cous he might not notice!

    However, if you don't eat pasta you might not eat cous cous either as they're both wheat...

    We dont eat couscous but bulgar wheat is a great alternative. I only know one recipe though and its very rich as you add quite a bit of oil. Ive tried to make tabbouleh but it was so bland I couldnt eat it.

    Its a really good idea though, do you have any recipes you use for flavouring it?

    Why not do "lighter" versions - i.e. casserole or stew with veg rather than with a pie crust, dumplings & potatoes? Or tomatoey sauces rather than richer ones?

    I like cold new potatoes with mint, cold pastas and rice salads - rice peas, sweetcorn and peppers - you can do anything with theseplus they are cook once eat twice as you could do them hot one day cold for lunch the next

    quiche is good for this too

    cold cuts of meat with spring veg, baby carrot, asparagus etc

    Barbeque can be quite cheap too e.g. kebabs with pitta

    Salmon is summery serve it cold - cook it in wine with redcurrant jelly and jarred mint sauce

    cheeses any good? feta omelette

    Tapas dishes - can be eaten cold and hot patats bravas, roasted peppers, spanish omelette, cheesey aubergene you can use the peppers to make yummy sandwiches
