You can also dust off your slow cooker and use it for soups - a few I've made recently are: -
- Tomato soup - using a big box of ripe tomatoes I got cheap from the market. I thicken it with bread cut into cubes and pureed, which is delicious and very cheap.
- Potato and nettle soup - similar to potato and leek but more tasty. Nettles are free so literally costs pennies for some potatoes and stock.
- Carrot and cardamon - again very cheap (a big bag of carrots normally cost less than 80p), filling and very good for you.0 -
Roasted vegetables with cous cous
Veg/bean chilli (batch cook the chilli and freeze) with cous cous, sour cream and supermarket value tortilla chips.
Pasta with pesto/creme fraiche/mushrooms/sweetcornNevermind the dog, beware of the kids!0 -
When I was a little girl we had bacon and egg pie basically bacon cooked to a crisp (streaky is good for this and cheaper) a pastry shell baked blind and filled with a tiny bit of chopped onion and crispy chopped up bacon and three eggs beaten poured over the top. This is called nowadays quiche but it was bacon and egg pie in the 1950s.I always sprinkle a few chopped mxed herbs or chive snips over the top before it sets.Wonderful hot or cold with a salad of tomatoes,lettuce and cucumber.Darned sight cheaper to make your own than spending £3.50 on one from the supermarket.I reackon cost wise its about a quid including the electic to cook it
But then I am a frugal old woman who hates waste .When they kids were little, my baked blind pastry case became 'odds & sods pie' as I would bung anything in it that was left over in the fridge.Great Thursday night dinner, as it was the day before pay-day then. even managed to get the little one to eat a bit of chopped up small left over brocolli as she didn't notice it amongst the rest of the ingredients.0 -

If you're not into baking then I do a very similar recipe but putting the quiche mixture on a base of mashed potato. Very filling and I find 'real men' like it.0 -
Stuffed veg. We like stuffed peppers (cut peppers in half lengthways), courgettes or large mushrooms. Pre cook the peppers or courgettes for about 10 mins in the oven. I fill them with a mixture of breadcrumbs, garlic, herbs and cheese, bake in the oven, lovely served with a rice salad.Don't be a sheep, be a shepard!

Suddenly I have the urge to dump a lot of my winter/spring recipes and find some nice light refreshing ones. Hubby bought me the Country Kitchen mag as a treat today, but even though it's the July issue a lot of the recipes are still very heavy on the pastry and carbs.

My favourite summer meal is Big Salad
Get a big bowl (glass if poss) and layer salad veg, cooked veg, grated cheese and crumbled cooked bacon.
My usual combo is spinach leaves, peas, cheese, grated carrot, sweetcorn, tomato, cucumber, red onions, bacon, grated cheddar and toasted seeds on the top. I usually try and get two layers of each ingredient.
Other things that work well are cooked asparagus, cooked green beans, prawns, cooked chicken/turkey, ham, tinned fish or leftover salmon. Other cheeses can be used. Just use thing that appeal to you but make sure you include some protein and then you don't need anything else except some bread and a blob of mayonnaise.0 -
