Almost Mortgage Free - Just hanging on in there....

  • Just 'lost' my curry recipe... don't know what's going on ...must be tired-itus setting in, so here goes again...(!)
    Its an adapted SW recipe that has become a firm favourite and its easily adapted to a vegetarian recipe (just leave out the chicken and add more veg!)

    I won't be too strict on quantities as you will add sufficient for your own families... but this makes 3xportions for us

    1 tablespoon olive oil
    2 tablespoons of P@taks Balti Paste (or medium curry powder to taste)
    1 teaspoon of grated fresh ginger
    1 mild onion, sliced
    2 carrots and 1 courgette, thinly sliced
    1 tin of chopped tomatoes, plus half tin of plain water
    1 chicken oxo, 1 teaspoon canderel (sugar substitute), salt and black pepper to taste,
    Cooked chicken pieces.
    Approx 3. tablespoons natural yoghourt.

    Heat olive oil in large saute pan. Add onion and cook until soft. Add Balti paste (or curry powder) to pan and stir together.
    Add ginger, vegetables, chicken and stir.
    Add tin tomatoes, water, chicken oxo, canderel, salt and pepper - and leave to simmer for 25 minutes to let all flavours infuse.

    Take pan off heat and leave to cool for about 5 minutes (until it has stopped bubbling). Add natural yoghourt and stir in.

    The natural yoghourt makes the curry sauce more 'creamy' and also cools the curry down if you have inadvertently made it too strong!

    Obviously, cook your rice while the curry is on the go...

    Delicious! (well we think so!)

    Hi there, wanted to pop in as a frontline NHS worker. Good luck with clearing your mortgage. I've also been trying to lose weight and have done a combination of SW, daily exercise and wine just on a Friday and Sat. Can't quite get it down to just a Friday!

    Thanks for sharing the curry recipe, we eat a lot of curry and make something similar now but always used to use double cream. DH has also lost 7lb with me making these small changes to family meals.

    Been feeling a bit icky over weekend, and just trying to catch up on everyones diaries. Not quite there yet...

    New girly and gallygirl, how are you getting on?
    Hope your diets are going ok? Always harder for me at the weekends, much easier to control on weekdays for me! Been a bit queasy over this weekend though, so not been overboard on anything. Just sat and cabbaged, so still looking like a cabbage! ;)

  • ... Started a brew of Damson wine tonight. Not made wine before, but we do have some Damson gin coming along nicely so decided to look up a Damson wine recipe online and have a go! Well let you know!

    Also made some more Damson jam , could do with finding other Damson recipes to use the fruit up. Anyone got a tried and tested recipe for Damson chutney or whatever? Xx

    Stating the obvious here, but isn't it funny that its the females who are taking the lead on the mfw front, with our oh's agreeing in principal as long as it doesn't affect them too much :eek:

    I find it interesting that it's mostly women who post on this board, but I've got a different theory as to why.


    It's to do with the way men and women use the internet. I think women are more likely to enjoy the community aspect, which is why we interact like this, rather than play games etc.




    Or perhaps it is just men burying their heads in the sand and letting their wives get on with it:rotfl:

    LOL! Yep, agree on this as well! My oh likes earning and also spending it! He's torn between living for now and equally saving for mfw. We are at that age where things start going wrong health wise and have had a few shocks quite close to home so can understand totally where he is coming from. However, I'm for peace of mind and spending time together instead of in jobs we now are despairing of.


    We are therefore trying to do the best of both worlds, not frightened of taking holidays but still working towards mortgage free... We're nearly there. :T

    But yes, I value the community support of this (female) forum but do wonder how many men are lurking on here?!
