    What's wrong with sweet corn? I thought it was fiberous?
    I say this as it's one of my favourite veg. :D
    I do like broccoli and spinach never tried kale. What's the best way to cook with it?

    Nothing's wrong with sweetcorn, but it's important to eat lots of different vegetables because they contain different nutrients. Dark green leafy ones happen to be particularly nutritious. Off the top of my head, they're high in potassium, calcium, magnesium and folate. Some simple advice that seems to be taking off quite well and sounds sensible is to eat the rainbow i.e. eat all the colours of vegetables!

    Cook kale in much the same ways as you would the broccoli. Boiling is probably the most common, but steaming works well too. It takes quite a lot longer to cook than spinach and releases far less water, but goes with the same things. I like kale mixed with creme fraiche and black pepper. Lots of very simple kale recipes on the internet you could try.

  • Weigh in this morning have lost 1 pound bringing total weight to 11st 6.5lbs also lost another half inch all over except left thigh/arm which gained 1/2 inch? I am right handed.
    :j I'm happy with this outcome.

    I have also started putting together a snack pack that I can take to my mum's. So far it contains Brazil nuts, almonds, pecans, Omega sprinkles (contains a mixture of sunflower seeds, sesame seeds, pumpkin seeds, brown & golden linseeds), dried cranberries and dried apricots. Herbal teas (peppermint, Nettle and Peppermint&licorice)
    This should keep me going in snacks for the month.
    Fruit I will get while we are up there.

    Still deciding on what to pack with me in for the car journey (6-7hrs) as do not want to be forced to get something unhealthy because I didn't have the forethought to think ahead.
    So far I have come up with the following ideas
    smoked salmon wrapped around some cream cheese or
    ham wrapped around sliced egg
    nuts
    dried fruit
    fresh fruit

    Does anyone have any handy ideas?

    It leaves the body the same way you put it in basically, much better veg you could be eating.

    I'm not a big advocate for ham or processed meats to the health concerns. What about some tuna salad in a Tupperware box - throw in some celery, kidney beans, onion, spring onion, lettuce - whatever you fancy. Wee bit of cheese.


    Peanut butter on celery is a beaut snack
    I love cottage cheese with tuna & avocado
    You can stuff tomatoes and peppers with anything really
    Berries / Melon Chunks
    Sugar snap peas
    Homemade Hummus & Carrots for dipping

    Tuna salad is a good idea. I think I may have a cool bag somewhere as well which would come in handy.
    I just know that we will be stopping off at a certain service station and the only shops open are McDonalds and WH Smith. So choices will be limited and healthy choices almost non-existent. I will be feeling so virtuous :A eating my healthy options while they are munching on McDonalds. My body deserves better than that.

    It certainly does and McDonalds fills you for about half an hour and then you are hungry again! Its hangover food really!!

    I do love McDonalds I do have to admit even though I know cardboard has more nutritional value. That is why I am trying to go in with an action plan so I am not setting myself up to fail basically.

    I'm not saying I will never have it again (otherwise it is all I can think about stupid psychology) but while I am on my weight loss journey I do not want it.

    Food and exercise for today

    B: half bowl porridge with 1tsp peanut butter (saw this on another post it was a bit too rich for me)
    L: butternut squash & feta quiche with mixed leaf salad and roasted vegetable couscous (contains aubergine, spinach, red onion, tomato)
    D: spaghetti carbonara - spaghetti, bacon, mushrooms, garlic, nutmeg, eggs, cheese
    S: Banana, dried cranberries, 4 Brazil nuts, 5 almonds, nectarine
    E: took stairs twice, 2 mile, day 3 squats/abs/push ups

    What are your portion sizes like?

    What is the base for the quiche? My thoughts on the above is that you have a good variety of fruit and veg, but its still carb heavy and if you dont weigh your portions, I think you should start.

    You could be potentially eating a lot of calories without realising it
