    I've been waking randomly, in the middle of the night (say 3.30-4ish?) this week - and been wondering why ... wondering if I'd "heard a noise" in my sleep or what.... it was all a bit spooky really...

    A different sort of "waking up in the night" to the regular sort.

    So it wasn't just me this week then!

    Whitebait is one of the best and most under-rated foods.

    So is kippers for breakfast.

    I love a good kipper. Well worth the pain of the pin bones for the great flavour.

    Properly smoked fish is a joy. When I get a new barbie my plan is to turn my old one into a combi hot and cold smoker.

    A mate of mine used to have a smoking shed on his farm. The first time a bunch of us went there he had caught a wild salmon the night before in some of the best waters for salmon to be found in England and had cold smoked it overnight. OMG.

    One of my favourite simple dinners is hot smoked trout pate. Mash a fillet or 2 of hot smoked trout with some creme fraiche/sour cream, butter, lemon juice and black pepper. Have it with salad dressed with a pretty sharp dressing and loads of bread/toast. Nom, nom, nom.

    A fancy version when you've got people over is to line a bowl with clingfilm and line that with cold smoked salmon/trout and then line that with the pate. It doesn't taste any better but it looks a bit flash.
