Probably my rice pudding, although I haven't actually costed it...white rice, any type of milk(fresh, uht, dried), and sugar, simmered on stove until the rice is cooked and the sugar has (slightly! Or you'll have a burnt pot -trust me, I know:eek:) caramelised.

Dal and rice with HM yogurt and HM chapatti.

Works out at 17p per porton - loads of ethnic dishes are pretty cheap to make.

whenever Mr T has croissants on offer or I see some whoopsied a fave of ours is croissants with ham and cheese. Cut the croissant in half and put a slice of ham (can use anything from posh down to value, value works out at less than 5p a slice), add some sliced or grated cheese (again anything from brie or emmental to value grated cheddar) put top back on and heat in oven for about 10 minutes. Can be served as a lunch or starter on its own or with a little salad and is also good with chips and peas as a main. Even factoring in chips and frozen peas it can easily come in under 50p a portion or can be poshed up for not much more of a spend.

    Sausage casserole:

packet of sausages plus onions, carrots, potatoes and swede in SC with gravy and a quartered apple or pear in for the last hour or so. And a bit of parsely if you have it.

I have even used basic sausages and it tastes lovely.

Quick chilli bean pittas - Serves 2
Total cost: 84p (excluding chilli and garlic powder from your spice rack)
    Value pitta breads x 6 - 20p
Value Kidney beans tin - 17p
Handful of frozen sweetcorn - 15p Peas can be used as a substitute
    An Onion - 12p
A good slug of tomato puree mixed with a tablespoon of olive oil -20p
(Alternatively blend up a tin of tomatoes, 33p)
    Chilli powder, garlic powder

Fry onion with chilli powder and garlic powder (fresh is better if you have it!). In a seperate bowl mix together the tomato puree and olive oil. Alternatively blend a tin of tomatoes plum or chopped and add a teaspoon of olive oil instead. Coat the kidney beans (drained and rinsed) and sweetcorn in the tomato mixture, and add to the onion in the pan. Allow to simmer and infuse flavours. Lightly toast the pitta breads, slit the tops open and fill with the chilli beans!

If you have some cheese that needs using up it goes VERY nicely sprinkled on top. If you have some dried hard cheese in your store cupboard this can be nice too!

This is really filling and quick. There is also 14p left over, you could even spend 13p on a tin of Te$co Value rice pudding for desert and have a penny change :P

  • When the chips are really down (and there aren't any chips!) - baked bean curry. Basic in the extreme. Improved by starting with a chopped fried onion, and better if flavoured with curry paste rather than powder, but either will do.

Baked bean shepherd's pie is tasty too, especially if the mash is topped with a bit of grated cheese before grilling. Crushed crisps on top also make it extra crunchy, but be careful not to burn them.

    Hi chirpychick,

Although the threads may not be recent, the recipes are still relevant so I've added your thread to the most current one on cheap recipes to keep the cheap meal ideas in one place.
