My favourite cheap, easy, one pan+steamer pan meal is :- dice carrot,courgette(bit bigger as cooks quicker), small broccoli florets, frozen peas, broad beans, all these or any combination of veg. you have to hand. Boil water in kettle, place 75g pasta in pan pour on water, place steamer pan containing all the veg. on top lid on. All the veg. will cook at same time as pasta. When pasta ready drain. Add either pasta sauce or tin toms and the cooked veg. Heat & stir just to warm sauce. Put on warmed plate and add lots of grated cheese or to your taste. Loverly! Full of fibre and protein. One pan, one plate, wooden spoon & grater to wash-up. My sort of meal. Enjoy.0

Postscript to my previous recipe for veggie pasta. If you do not have steamer that fits on saucepan you could micro the veg. or cook them in another pan.0

Mine is just pasta tossed in a little butter or olive oil and grated nutmeg topped with grated cheddar cheese, under the grill till brown and bubbling. You can add veg to the pasta and tomatoes on top but even just plain, this is my all time fave dish!0

Egg Cheese and Potatoe pie
Cook potatoes, drain and then mash mix in grated cheese and put into a baking dish. Make shallow dips in the potatoe mix and then crack an egg into them. Bake in oven about gas mark 5-6 til eggs are set. We usually serve with baked beans and ketchup.0 -

I just added up how much it cost me to make Dinner for my family of 3 for the last two nights... and was amazed at just how cheap I managed it... and it was so lovely it was more of a luxury then a cheap meal.
So I thought I would start a thread, and get everyone else's bright ideas.... Not price limit... just ideas of lovely family meals... which keep both the family and the purse happy!
But you have to add up every ingredient, but for a true cost I am going to put the cost of WHAT I USED not the whole pack...
Here goes mine: Chicken Soup with fresh Rolls and REAL Butter!
Soup:
1 Chicken Portion (Leg and Thigh) = £1
1/3 Bag Potatoes = 33p
5 Carrots = 50p
1.5 Onions = 19p
Stock Cubes = 3p
Salt and Pepper!
TOTAL = £2.05 (6 Portions) = 34p a Portion
Rolls:
Flour = 50p
Yeast = 10p
Salt!
TOTAL = 60p (4 x 3 Portions) = 5p a Portion
Butter = 7p a Portion
GRAND TOTAL = 46p per Person
(Which cost me £2.76 to feed my family for two nights!!!)
Please add more great costing meals below... lets drive down the cost of our meals... so we can spend the money on SHINY things!:DWe spend money we don't have, on things that we don't need, to impress people we don't like. Chicken and baked bean 'lasagne'
1/3 slow cooker chicken = £0.66
Value lasagne sheets = £0.10
1 tin Value beans = £0.29
1 carton passata = £0.39
1 chopped pepper (from basics pack) = £0.27
2 chopped tomatoes (basics pack) = £0.28
1 Onion = £0.18
Courgette = £0.26
Garlic = £0.07
Sprinkling of cheese = £0.20
Stock cubes = £0.03
Total = £2.73
Makes 4 HUGE portions at £0.68 per portion or 8 regular size portions for £0.34 (I have a regular size but my husband has a HUGE one!). Veggie version without the chicken comes in at £0.51 and £0.26 respectively!
N.B - I tend to make this as the first meal of my rubber chicken week. I'll add the chicken straight from the slowcooker into this before it has a chance to cool down so there's not too much reheating of the chicken, especially as there's no way you can get through this entire dish in one night, unless you have a large family!My mortgage costs me a sobering £13.06 A DAY!:mad:That's about 5 pairs of shoes a month i'm missing out on! :eek:0 -
