    Tofu curry + whatever misc veg are lying around. Much cheaper than meat at £1.50 a packet that generally stretches to two meals for 2 people

    I buy a bag of frozen veg from Aldi (about 89p I think). Chop up an onion and with stock (I used Kallo) mixed herbs thrown in, whatever you have lying around aswell. Boil, then simmer for 40 mins or so.

    Blended and then in each portion (it makes 5-6) I add 1 TBs Elmlea Cream (18 calories) which lifts it into luxury class in my view.

    I use this for my lunch throughout the week - I don't have a lot of time to eat and this goes down fairly easily. Sometimes I add a tin of beans, cannelini, butter or lentils to bulk it out.

    This is my cheap, store cupboard/freezer recipe and I generally have all the ingredients in.

    Pasta with breadcrumbs is my favourite at the moment. Great way of using up green veg and really tasty.

    Ingredients: Spaghetti or other pasta, A lemon, 1 small leek, couple of mushrooms, handful of green beans, homemade breadcrumbs, Garlic.
    .............................................

    Boil spaghetti.

    Melt butter in frying pan, add a bit of finely chopped garlic or garlic paste. Put in a couple of handfuls of home made breadcrumbs and fry for 1-2 mins until crispy. Put breadcrumbs on one side.

    Add more butter/olive oil to pan. Squeeze in some lemon juice.Gently fry chopped leek/green beans/mushrooms. Mix in cooked spaghetti. Throw breadcrumbs over the top.

    Optional extras: Parmesan grated over the top/black pepper/grated lemon rind.
  • We love a couple of courgettes sliced thinly then gently fried (don't let them brown) in a bit of oil until they are soft and mushy. Mash them a bit with a spud masher (or fork) then stir in a bit of cream and a handful of grated cheese. Bubble for a minute or so then serve on cheap spaghetti with plenty of pepper. This is fairly cheap but even cheaper if you grow the courgettes yourself. Scrummy.

  • 1 onion, 4oz mushrooms, 1 cooking apple chopped, 1 pepper chopped, 3 tsp curry powder, 1 tbsp plain flour, 1 stock cube in 1/2 pt water, 1 tbsp mango chutney, 1tbsp tom puree, small tin chopped tomatoes, tbsp raisins. Fry onions, peppers and mushrooms, add apple, curry powder and cook for few mins, add flour & stir, add stock & remaining ingredients & simmer for 30 mins. Lovely fruity curry & can add any left over meat from roast or some prawns to serve 4! :j

    As all of my meals are cheap I could give you anything but Poverty Pie was always popular - basically everything in the fridge at the end of the week and put a crust on it or a particlar favourite of mine when times are really hard, mashed potato, onion, any other bits & pieces in a toasted sandwich. Sounds gross, tastes lovely.

    Veg/Rapeseed oil to fry the egg and oven chips. Not too unhealthy! Great with beans. Egg, beans & chips is the national dish of the skint.

    This tends to be main meals. My favourite cheap lunch meal is baked potato with tuna mayo. Can't beat it.
