It's amazing what you can get away with in a microwave. How about:
Spanish omlette for one (multiply up for more):
If you have a few boiled potatoes over.... Microwave two or three mushrooms with a slice of onion or two or three spring onions and a slice of red pepper (plus a clove of garlic if you like, for three minutes on high. Add the potatoes diced and a couple of frozen beans or a few peas and microwave one minute more. Sprinkle with some grated cheese and break one egg over the top, some salt and pepper. Stir thoroughly to coat the contents with the egg. Microwave for 1m30secs on medium and turn out onto a plate with a couple of salad leaves and a tomato.
Fastest pasta sauce ever.
A large tomato or a couple left in a can
Two spring onions
Clove of garlic
Squeeze of tomato puree
Salt
Pepper
Teaspoon of best olive oil
2 to 3 leaves of basil
Half glass of white wine or water
Directions:
Chop tomato, spring onions and garlic. Tear up basil leaves. Mix all these in a cup with the tomato puree, olive oil and white wine. Season. Microwave for two minutes. Pour over pasta.
Hi Speed Hotdogs:
1 onion, finely chopped
4 frankfurters - Herta Oak smoked are good
2 slices of bread or a Bread roll
Tomato Ketchup
Mustard.
Directions:
Place the chopped onion in a microwaveable bowl and cook on full power for 2 minutes, with the lid off, to let the steam escape.
Place the frankfurters on top of the onions (should just about fit, but cut in half if necessary. Put the lid on to keep the steam in!
Cook on full power for 1.5 to 2 minutes.
Whilst cooking spread one slice of bread or half of the bread roll or bap with tomato ketchup and the other with a thin layer of mustard. You can add butter if you want but it gets very messy!
When cooked, put the frankfurters on the bread and cover with the onions, plus some salt and pepper.
Don't forget 4 sheets of kitchen roll and a pinny!0 -

Here's a cheapy scandinavian style dish:
12 ozs potatoes
1 small red onion
2 cloves garlic
4 ozs green beans
I large or 2 medium beetroot
Packet of boil in the bag kippers
1 Hard boiled egg
Dill
2 dsp Creme fraiche or yogyurt
5 -6 dsp Mayonnaise
Directions:
Variations:
Set the beetroot to cook (Microwave on full power in a covered glass dish with 100ml water for 10 - 15 minutes until done). Set aside. Boil the potatoes until done (12 - 13 minutes). Boil the green beans for 5 - 6 minutes. Set the egg to hardboil for 8 minutes (- stick it in with the kippers) Boil the kippers in the bag for the designated time. Cool the vegetable slightly so they can be handled, by dipping in cold water in a colander.
Whilst cooking continues, chop the onion and garlic. Chop the dill and mix with the creme fraiche/ yoghurt and then add the mayonnaise and mix well.
Peel the beetroot and chop into medium chunks and add to a large bowl. Add the chopped onions and garlic. Add the beans and chop the potatoes into similar sized chunks to the beetroot.
When the kippers are cooked (four/five fillets) remove the skins and chop them into similar size to the other items and add to the dish. Pour over the dill mayonnaise cream and stir well until eveything is coated. If you are really flush, a few chopped anchovies go well in the mayo.
Decorate the tip with slices of hard boiled egg, parsley, watercress and small tomatoes and serve whilst still warm.0 -
Another simple one is sardines on toast, but you have to spread the sardines on, add a HUGE amount of pepper, then stick it under the grill to warm it all up again.Trev. Having an out-of-money experience!

A cheap or rather "oh good grief we have no food in" meal for us is often cooked pasta mixed with a tin of baked beans and grated cheese, it's rather delicious! DH likes a veggie burger/couple of sausages or something with his but I'll eat mine as is.
Baked potatoes with beans and cheese is another comforting and relatively cheap favourite.
I know all about the not reheating rice and watching how you store it rules, I know this but I am terrible for reheating it and even shoving it in the freezer, thawing it and reheating it at a later time (usually because it has been mixed in with some curry) so far I'm not dead but I know I shouldn't do it. Quite often people will drink loads, get a takeaway and then be sick the next day and blame the beer but it's often rice left around at optimal nasties breeding temperature causing it.Official DFW Nerd Club - Member #398 - Proud To Be Dealing With My Debts :T

mmmmm i used to get these from the chip shop! Do you literally cut a piece of (cooked?) potato, dip it in batter (yorkshire pudding batter?) and fry it? Does it have to be deep fried?0 -
I used to make these for my OH! before the days of deep fryers.
you use uncooked potato and slice them about a quarter of an inch thick. then dip them in salted flour and dip in your batter.
I used to shallow fry them very gently in some oil until they were fairly well browned and a sharp knife would go through easily. you have to cook gently or the batter will be browned before the potato is cooked.
I havent made them for ages, will try some tomorow for supper I think and will put them in deep fryer on about 130 degrees as I think the normal chip setting will be too hot.0 -
We love what we term Hawaiin Toast
Toast, topped with slice of ham, ring of pineapple then topped with cheese. Grill till cheese bubbles and browns. Like cheap pizza but very yum
well as i said in post 58 we would be trying this , this week. this is what we had for lunch today. went down a treat. thnk this will be a firm family fav from now on.
i changed it slightly. i toasted one side of the bread, and then on the un-cooked side i spread thinly tomato ketchup, then slice of ham, followed by pineapple pieces and lashing of grated cheese. cooked until brown and bubbly. wow it was devine. Thanks some most for posting this sam0
