Your Cheapest Evening Meal.

I just wondered what the cheapest people could do an evening meal for. I have 2 kids and a OH.

Thanks

I think my cheapest meal is a Chilli..... i dont use mince, I use 1/3 of a big pack of turkey from the supermarket which cost £2.40, which makes it about 80p worth! then a little oil, a little chilli, paprika and pepper, half a tin of value kidney beans (about 23p) a tin of value chopped tomatoes (about 15p) served with rice (about 50p worth)

making it about £1.60 for two people, very filling and yum yum!!

But then another cheap meal I make is a Thai curry:

    about 80p of turkey
54p for a block of creamed coconut
    30p for a pepper
a bit of oil, some lemon jiuce, some spices from my cupboard (about 20p)
    served with rice (about 50p)

makes it £2.30 for two people - a bit more expensive but its nice for a treat :)

    Another great cheap one:
    Pasta and Turkey

two thin turkey breast slices - 50p (I get a pack of 8 for £1.99 in morrisons)
    half a bag of dried pasta - 9p (19p a bag woooo!)
lemon juice and pepper to steam the turkey in - about 20p
about 1/4 of a bottle of vinegarette dressing - 20p

(cheese on top of OH's portion - c.40p)

makes it under a pound without OH's cheese!! for two of us!

This is a 3 course menu for 4 from a book called "Great value Gourmet" by Paul Gayler. At the time the book was published (1996) this was costed in the book as £1 for the whole thing. Might cost a bit more now but should still be cheap:

    Spicy Mexican barbecue bean soup
    Hot dog fusilli
    Cinnamon baked applea en papillote

    The recipes:
    Spicy Mexican barbecue bean soup
    2 tbsp olive oil
    1 onion chopped
    1/4 tsp dried chilli flakes
1 potato cut into small pieces
14oz canned baked beans in tomato sauce
    1/2 pint chicken stock
    1 tbsp brown sugar
    1 teaspoon mustard
    1 tbsp molasses (optional)
salt and freshly ground black pepper
Heat the oil, add the onion and cook till soft. Add the chilli flakes and cook for 1 min to release flavour then add the potato and most of the beans. (Reserve 4 tbsp for garnish) Stir well, add stock and cook over a low heat for 15-20 mins until the potato is nearly tender. Combinr the sugar, mustard, molasses, salt and pepper. Add to the soup and cook a further five minutes. Pour into a blender and blend to a smooth puree. Taste and adjust seasoning if necessary. Serve garnished with the reserved beans.

    Hot Dog Fusilli
    6 tbsp olive oil
8oz frankfurter sausages sliced 1/2 inch thick
1 tsp dried sage or mixed herbs
    1/2 clove garlic crushed
    pinch dried chilli flakes
    200g canned chopped tomatoes
salt and freshly ground black pepper
    450g fusilli pasta
    4 tbsp parmesan (optional)
Heat 2 tbsp oil in frying pan, add sausages and cook till golden. Stir in the herbs then remove from pan and keep warm. Add a little more oil to pan then add garlic, chilli and tomatoes and cook till the tomatoes have thickened slightly and become seperated from the oil. Season to taste and keep warm. Cook the fusilli until al dente then drain and return to the pan. add the tomato sauce and sausages and toss together.

    Cinnamon baked apples en papillote
    3oz butter
    3 oz sugar
    1/2 tsp ground cinnamon
    2 drops vanilla essence
    juice of 1/2 orange
    4 eating apples
Preheat oven to 190C/375F/Gas Mark 5
Melt butter in a saucepan, add sugar, cinnamon, vanilla, orange juice and 4 tbsp water and boil until caramelied to a light sticky syrup. Core the apples and make a few incisions in the skin to prevent bursting. Butter a sheet of foil 15 inches square and place on a baking sheet. Lay th eaplles on the foil leaving a gap of 1 1/2 inches between them. Brush the syrup over the apples, then enclose in foil. Bake for 20-25 mins. Serve with the juices poured over them.
