    Getting back on board with meal plans so this week our food looks like this...

    Monday 27th – Spiced pollock, HM wedges & salad
    Tuesday 28th – Tomato, cheese & pesto tart with salad
    Wednesday 29th – Butternut squash soup & HM rolls
    Thursday 30th – Jacket potato w/chilli
    Friday 31st - Prawn coconut curry & naan
    Saturday 1st – Chicken fajitas
    Sunday 2nd – Chicken pieces with roast trimmings

    Weekday breakfasts - Me and DD (11 months) porridge & fruit, DH crumpets
    Saturday breakfast - egg on toast/flour free pancakes
    Sunday - toast with jam

    Mon-Sat lunches - me and DD soup, wraps & beans on toast, DH sandwiches, wraps, pasta salad
    Sunday tea time - cheese and biscuits.

    Trying to live a good life on little money :T

    I've got a bit out of the habit of meal-planning recently and really must get back to it, so here's mine for this week, better late than never:

    M - aubergine and paneer curry (made with a jar of sauce, but a SO one) and RTC naan bread
    T - lazy chicken parmigiana (RM, RTC breaded chicken fillet with tomato pasta)
    W - chorizo and root veg stew
    T - mushroom kiev with braised green veg
    Back after a very long break!

    I used this recipe from Sophisticated Gourmet below, I wouldn't say all of them came out successfully, but the ones I have tried have been pretty yummy - not bad for an impatient first attempt - although I think they do need a bit more butter in them to be like authentic Aunty Anne's AKA heart attack in your hands :p

    New York-Style Soft Pretzels Recipe
    Adapted from Martha Stewart
    Makes 12


    When it comes to making any bread dough, I do everything by hand. No machinery is needed for this recipe, but if you are short on time, or don’t have the energy to knead for a good 5-10 minutes, I’ve included instructions on how to make the dough in a stand mixer.

    When measuring the flour for the dough, I used a scale (if you don’t have one, it’s time to make the best $25 investment you will ever make). If you do not own a scale, when measuring the flour, be sure not to compact the flour into the measuring cup; fluff the flour in its container and spoon it [lightly] into the measuring cup, and use the back of a knife (or a spatula) to level the flour. Do not tap the sides of the measuring cup, as this will also compact the flour.

    For shaping the pretzels, refer to the four photos in the blog post.

    Ingredients:
    2 ¼ teaspoons (¼ ounces; 1 envelope) active dry yeast
    ⅛ teaspoon fine grain sea salt
    2 teaspoons (8 grams) granulated sugar
    1 cup (8 fl. oz) warm water (100º to 110ºF)

    1 cup (128 grams) Bread Flour
    2 cups (256 grams) All-Purpose Flour
    2 tablespoons salted butter, softened

    Vegetable oil, for bowl and baking sheets

    ¼ cup (72 grams) baking soda
    1 ½ tablespoon granulated sugar

    1 tablespoon pretzel salt / course grain sea salt

    Egg, beaten
    1 teaspoon water

    Preparation:

    Mix yeast, sea salt, sugar, and warm water in a small bowl, whisking until sugar dissolves. Let stand until foamy, about 5 to 10 minutes (Kamran Note: I let it sit for about 8 minutes).

    Place flour into a large bowl. Using two butter knives, a pastry cutter, or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.

    Slowly pour yeast mixture over flour mixture, stirring with a wooden spoon or your hands to combine. Using your hands, gather dough together. Turn dough onto a lightly floured surface, and knead until it is no longer sticky, about 5 minutes.
    Lightly brush a large bowl with oil and turn the dough to coat. Cover with plastic, and let rise in a warm place, until the dough has doubled in size. About 1 hour. (Kamran note: If you want, you can place the bowl of dough in the refrigerator over night)

    Cut dough into 12 equal pieces, and roll each into an 18-inch rope. Form a U shape with 1 rope, and twist ends together twice. Fold twisted portions backward along center of U shape to form a circle, then gently press ends of rope onto dough to seal. Transfer to an oiled baking sheet, and repeat. Let rise for 20 minutes.

    Preheat oven to 475ºF.

    Bring a large pot of water to a boil, and add baking soda and 1 ½ tablespoons granulated sugar. Boil pretzels in batches until puffed and slightly shiny, about 30 seconds a side. Transfer to wire racks to drain.Place pretzels on an oiled baking sheet. Mix the 1 teaspoon water and egg in a small bowl. Brush each pretzel with the egg wash. Sprinkle the with the pretzel salt or course grain sea salt (I used the latter).

    Bake until golden brown and cooked through, about 15 minutes. Pretzels will keep, uncovered at room temperature for up to 12 hours.
  • Just popping in to say im leaving the meal planning to oh this week. Apart from tonight. We having in chicken faijtas yum yum yum

    but also cant remember who wanted to know how yhe sticky chicken was. IT WAS GOOOOOOD!!! Defo going to have again soonish

    Lemon & pepper fish & chips

    This weeks' baking experiment is pretzels!

    Bit of a change already we both got in late today so wanted d a quick tea. There were 4 of the experimental pretzels left and just about edible, I topped them with grated cheese, chopped chilli and oregano and whacked under the grill for a couple of mins...yum, just like you get at the Trafford Centre ;)

    We spend money we don't have, on things that we don't need, to impress people we don't like. I don't and I'm happy!

    Wow. Simply Wow. Most of your mid-week meals are very inspiring and exciting!! Baby steps for me since I mainly cook for the freezer and take things out throughout the month with just some "fillers" every now and then otherwise bf dies of food-boredom!
    If I decide to do something a bit different I would blow up my monthly badget in 4 meals! As I said..baby steps..

    I'm just working out our meals for the next week
    Sunday- Beef Asian casserole
    Monday- Omelettes or jacket potatoes with gammon
    Tuesday- Gammon, egg and chips
    Wednesday- Pork and stuffing with 3 veg mash and yorkshire puddings
    Thursday- Turkey curry with turmeric rice :cool:
    Friday- HM pizza
    Saturday- What ever is left over

    I will be buying the pork loin, which is really just like gammon on the Li dl half price weekend deal. I'll buy 4, 2 will make main meals and 2 I'll slice for sandwiches for 2 days and dice to make a quiche for lunch 1 day.
    The rest of our lunches will be soup or lo from the night before or freezer.
    Breakfasts will be toast, porridge, cornflakes or dried fruit with hm yoghurt.
    Snacks will be HM flapjacks, dried fruit, fresh fruit from the super 6 or whatever I can get YS.

    I have really overspent the last week since pay day and I'll be having quite a large spend on Saturday also. I'll have to get through the week on very little for the rest of the week.
