    there's a great recipe in Tana Ramsay's family cookbook for cabbage, bacon and butterbean stew.

    haven't got it with me at the moment.
  • Do you think it would still be nice without the bacon? Am not eating meat at them moment!

    I posted a thread asking the same thing a few weeks back, had some lovely ideas so might be worth a search. Sorry I cant remember exactly what I asked but had loads of lovely ideas in it!

    I love butter beans, and use them just like any other pulse. They are used a lot in Spanish cookery and in the US they have the Spanish name - pinto beans - so if you find a recipe for pinto beans, same thing. They're fairly bland, so very accepting of strong flavours, garlic, anchovy, etc. Or if cold in a tapas they mix nicely with olives or smoked fish (are you off fish too ?)

  • yes i'm trying not to eat fish but finding it very hard as I love fish. I have bought dried butterbeans. Love olives though so am liking that idea!

    You can make a 'butterbean hummus' by mashing them with garlic, black pepper, lemon juice and a bit of olive oil. Or add a smidge of chilli.

    As they're dried, you'll have to start by coaking, then cooking, then cooling them, so it's not instant food, but cheap and delicious.

    I make a parsnip and soft pepper cheese (boursin) soup by cooking up the peeled, diced parsnips in (chicken) stock and then blitzing it in a blender with the cheese.

    I then add a GOOD handful of cooked butter beans to the mix before serving to give it body.


    Served with warm home made sesame baguettes and ice cold butter chunks.
