Use for butterbeans?

I have about 4 tins of butter beans and apart from having them just cooked as a side dish I havent a clue what to do with them, ive added to soups and casseroles but would like something different to do to use them up, the easier the better really!

    My mum would serve them with sausages, tinned tomatoes and bread and butter for a tea-time meal when I was a child.

    Mushroom and Butterbean Stroganoff - very tasty and very cheap - if you like the sound, I'll dig out the recipe and post it later.

    Soften an onion with some garlic. Add some finely chopped veg and cook until soft. Add a tin of tomatoes, season, herbs, drained tin of beans. Cook for 15 mins. Serve with pasta.

    Hi,
    I made bean burgers last night using butter beans and cannellini beans.
    I used a recipe Gingham Ribbon posted on her Spring meal planner here.
    They were lovely and really quick and easy to make and cook.

  • I had a really tasty salad with butter beans in Franco's restaurant in London once. Butter beans, tinned tuna, red onions, served on bed of nice salad leaves and drizzled with a dressing. Nice with some crusty bread.

    They all sound lovely, hopelizzy thanks for that. I do have some black eyed beans too so will have to give that recipe a try. Does anyone else know of any veggie burger recipes flying around the site?

    This recipe comes from a very old M and S veggie cookery book and it's really yummy and quick and easy to cook once the butterbeans are ready, so with tinned ones, it shold be a doddle! I would say that 1 tin is probably about the right amount, but I'm not sure exactly how the quantities in the tins correspond with the dried version. I wonder if any one knows?

    Mushroom and Butter bean stroganoff

    8oz butter beans - soaked overnight, then cooked for 1 hour or until tender. Leave to one side. You'll add them to the dish towards the end.
    1 small onion - cook in 2 tablespoons of sunflower oil for a couple of minutes. Then add 12 oz button mushrooms, wiped and halved. Cook for another couple of minutes.
    Stir in 2 tablespoons of plain flour. Make a mixture of 6 fl oz of vegetable stock with 6 fl oz of milk, and gradually add this to the mixture, stirring, to make a smooth sauce.
    Add a bit of thyme (or whatever herbs you happen to have - I use dried mixed herbs).
    Add the butter beans to the pan and heat through.
    Stir in 3 tablespoons of yoghurt and serve immediately.

    This is lovely with rice - we used to live on it when we were students, although my OH has now gone off it a bit because we ate it so often at the time!

    How many does that serve nell2? I might try that tonight actually, ive got a little bit of mince defrosted which should bulk it out nicely too, it will be a perfect way to use all my ingredients I have floating around at the mo.
