Well, to be honest, it serves 2 greedy people, although the official recipe that I've just checked with reckons that it serves 4. With some veggies or salad and some rice it ought to do 4. I hope you like it - as I said earlier, we went through a phase in our house when we ate it all the time! (In fact, now if we find something we like and I cook it too often, my OH talks about a dish 'becoming a butterbean'!) If you do it, please report back whether or not you like it!0

make sure you follow the instructions for soaking those, once they are soaked they can be used in exactly the same way as the tinned ones, I buy tinned ones because soaking is a bit of a pain to try and remember beforehand!0

Jamie Oliver has a great Leek and Butterbean Bake recipe that I often do as a side dish for a roast dinner.
I don't use any specific quantities, it depends on how much I've got of each ingredient!
Slice up some leeks and saute them in a pan until soft. Season, then add some tinned butterbeans and some cream/yoghurt/creme fraiche/ anything else like that that may be lurking in the fridge.
Pour into a shallow dish, top with grated cheese and bake in the oven until golden - everything is already cooked so it doesn't take long.

Lizzieanne, that has got my mouth watering. Imagine it would work well with chicken or fish especially. May have to try that one soon, im always looking for ideas for leeks as my organic box seems to like sending me absolutely huge ones!0

Chorizo and Butter Bean Stew
Soften chopped onions in a pan.
Add thickly sliced chorizo
Add tin of Butter beans and a tin of chopped tomatoes.
Cook until warmed through.
Great with thick bread on a cold day. Our friends love this as a side dish at a BBQFat and proud lol0 -

I tried this recipe for the first time the other day and everyone in the family loved it..... including fussy 5y DD! The only difference is I added some garlic and some herbs!0 -

I had a bag of these that had been lurking in my cupboard.... I soaked the whole lot overnight... boiled all of them, used some in the above recipe and the rest have been frozen so that I can add them to any dish that needs them. Have found that by doing this with other dried beans/pulses they actually get used .... I really cant be bothered boiling and cooking as a smaller portion each time!0
