    Now *that* sounds Tired :( capital T. Not good. I felt quite victorious at dinner, cos I actually chopped up an onion instead of just throwing frozen veg at some pasta :o I'm not really a cook, am I, I'm just faking - thats why I need Watty's input :j :rotfl:
    ...off to the big smoke tomorrow for a meeting to sort out loose ends - told bossman that if it didn't turn out well I was coming back to the office to have a sulk!:o

    Hope it goes well - meetings out of the office can be great fun, but not very often ;) And I *really* hope you get more sleep!

    Morning campers!

    So, its the last day of scanning for me, and I'm going for it hell for leather - I need to get all this out of the way.

    I have several other projects going on that are fiddly, but still turning my living room and kitchen into one huge workshop - scanning, shredding, making a little shelf to go in my meter cupboard, photo setups for the blog and the book, accounts paperwork, washing having its final dry, unopened post, stuff thats moved from the porch while I deal with the mould. As well as other paperwork items like the French accounts and lease to be sent to France, these are my jobs over the next few days - to get this lot sorted!

    This is nearing the end of Week 79 in my pension countdown, and its a new month next month - so as I planned, next week being the beginning of March sees me all out to work on my income and my life, rather than just preparing to do so, which is what I'm doing at the moment.

    3 small to medium sweet potatos
    1 cup of polenta
    2 beaten eggs
    1/4 teaspoon baking powder (I often forget this - it is ok!)
    zest and juice of 2 oranges
    100 g apple puree (I don't make my own although that would be much cheaper, I use the clearspring one!)


    Cook sweet potatos until soft and leave to cool then peel and mash up in a bowl. Add all other ingredients and mix well. Pour into a loaf tin lined with baking paper and cook at 180 C. Original notes said 30 to 50 mins but I find it takes more around an hour in my oven. I just keep poking a knife into centre until it comes out clean and then its done.


    I love this as it is quick and no effort! People who like sweet sticky cakes won't go for this but otherwise it has been a success when I've offered it to some teenagers which surprised me!
    Made it to mortgage free but what a muddle that became

    In the event the proverbial hits the fan then co-habitees are better stashing their cash than being mortgage free !!

    Here http://simplysugarandglutenfree.com/chocolate-walnut-flourless-brownies/ is the one I started with.


    Now I couldn't find any unsweetened chocolate so I used cocoa powder and found a recommended substitute online of 1 tablespoon butter and 3 tablespoons cocoa powder so for this recipe its 4 T. butter and 3/4 cup cocoa.
    I couldn't find agave nectar and just subbed apple juice. A pal who is more into food than I said it should have been concentrated apple juice but I just used what we had.
    The frozen banana thawed is key because the banana gets very liquidy.
    For the black beans I just chuck in one tin drained.
    I've never found anyone but me and one other person that likes these though but if you really want to try something sugar free then might be worth a try.

    PS Should add the "brownies" freeze will and are delicious with a dollop of thick cream.


    Good luck with the prep work KC. Am just about to start another of my "sites" for the 40 bags in 40 days. Deep breath .........

    Watty, thank you! Thats a lot of work posting that, I really appreciate it :) the brownies that I asked you for sound great - my *eyes* like sugar, but my stomach really doesn't :p so these could be perfect (cream upsets my stomach as much, but soy cream, although its only a single version, not a double, is healthy *and* tasty).

    - scanning is finished :j

    - shredding is started

    - M&S credit card application submitted (for the voucher and I might as well use the 0% spend).

    - dishwasher soak mode engaged.

    - washing machine is on

    - little shelf in the meter cupboard is on the way: the support I glued in yesterday is badly installed, will have to find another one possibly. Depends how wide I can make the shelf.

    - tidying things back to where they belong in the office has commenced, so I can start printing out the French stuff this afternoon.

    Thanks Cheery! Non-computer related stuff kind of stopped there, I'm afraid ... I was absolutely exhausted (noisy neighbours the last few nights) ... so I switched plans a bit.

    Conked out in front of the tv for a while, and then joined textbroker - I've drafted the sample article, will review it tomorrow - and rejoined dooyoo, wrote two reviews (spider repellent and weedkiller!!!). Very odd. I've just spent a very pleasant half hour leafing through tv series and books I can review :D bit of a waste of time, but I got *really* tired. And its good to see that I can review such different things as The Edible Garden, The X Files, Babylon 5, Psychodynamic Counselling in Action (I've just been scanning some college handouts on that into the computer!), all sorts of stuff.

    Done two reviews, which means I now have 210 points "pending" ... but lots of bad news: I have 8165 points **expired** :eek: thats a lot of points, and a lot of work wasted. I shan't do that this time!

    :coffee: Anyway, I think I may be recovered soon, so I'll be tidying and faffing a bit more shortly :)

  • It is exciting to be planning for a new life. Well done.
    Paid off mortgage nine years early in 2013. Now picking and choosing our work to fit in with the rest of our lives!
    Still thrifty though, after all these years:D
