  • Bf wants yogurt but I've told him he has to wait until we have easiyo sachets as they last much longer in the fridge (not that yogurt is ever in there long with the two of us yogurt fiends living here!) :-) my mum is supposed to be picking me some up from where she works this week ready to give me them on Saturday. I will remind her when I text her once I've left for work.

I've given her a gift voucher she originally gave me (!) and she owes me a further £5 from buying grocery bargains for them when I've seen them (Only stuff they use) so won't need to take anything from any budget!

My chinese fakeaway consisted of chicken in black bean sauce with edd noodles, crispy duck and pancakes with hoi sin sauce, egg fried rice, curry sauce, chicken satay sticks, vegetarian spring rolls, onion bhajis and prawn crackers. We had it in a buffet style :)

  • AARRGGHH....fell victim to those YS meats at weekend.
Went out and got a new chest freezer for additional space as well as my fridge freezer just cant keep up with me.

So I am planning alot of meals from the meats I have and was wondering what all you SC owners done. freeze once cooked into portions or portion up and cook in sc that way.
I have a 6.5L crockpot so find small portions a bit pointless and prefer to cook large and portion up. But have been intrigued by people who portion up meals and freeze to be cooked from frozen in sc.

Big changes in my house regarding budget so need to tighten belts and get my food spending under control.

Any meals I freeze have been cooked and just require reheating, so they'd not see a slow cooker after being taken out. I generally freeze just the meat and veg portion (in individual portion sizes as I cook for 1-3 people depending on the day of the week/shift pattern of OH/DS1 - lets me pull out exactly what I need), tip that into a pan while still frozen, and cook the carbohydrate part of the meal (potato, pasta or rice) while it reheats - sometimes reheating from frozen over a very low light (initially) if I forgot to take out of the freezer far enough in advance for it to defrost.

Budget blown!!! with one more week of my budget still to go. It was my own downfall - DS has had a super term & got certificate from the head teacher as well as being star of the day for most of the week. So praise his good behaviour I told him he could choose dinner Friday - well I stepped straight into that one of course he wanted chinese, so attempting to be all MSE bought the Mr T DIY stuff & it ending up costing me more than if I had cheated with a takeaway! Lesson learned - compare takeaway price to DIY before hand!

Well made 16 meals in the slow cooker. Had one for an early lunch and allowing the other 15 to cool off before freezing. I have packed them in individual 350 ml tubs so can get them out one at a time. So have also used up a lot of veg that was needing to be used quickly. So the next few days will be using up what ever else needs to be eaten before it goes off. So I definitely have enough food prepared for the month as long as I do not over eat.
It's really easy to default to cynicism these days, since you are almost always certain to be right.

I cook lots from frozen in my SC...
    I usually have in the freezer;
Spag Bol, 250g mince (half pack for me!) diced onion, grated carrot, passata, herbs and seasoning. In a ziplock bag and in freezer.
Thaw overnight or if I forget few hrs in morning.
Taco chilli; 250g mince, diced onion, chopped peppers, can of black eyed beans, passata 500g, taco seasoning. As above in ziploc and frozen.
Chinese beef: diced beef, soy, garlic, beef stock, sesame oil, 5 spice. Spring onions added at the end. All in bag frozen.
Curry; I freeze chicken and/or veggies in curry paste then just add coconut milk.

  • Hello everyone!

First grocery shop of Feb today - bought some meat I wasn't exactly planning to, but it was a good bargain. Two packs of lamb mince (500g each) and some sausages. I'm planning to make a shepherd's pie with one batch and then freeze in portions for lunches. Not sure about the other one but that should be me done for meat-buying for a good while :) Now I just have to fit it in the freezer :o

Was planning to cook the sausages for dinner tonight but I ran out of time so I had fried eggs with toast instead. Yum.

Going to an editing course tomorrow and lunch is provided (woohoo) so just need to make a quick dinner before going out in the evening. I'm thinking sausages :) Still have heaps of veg in the fridge from last week - I just hope it's still ok to eat! I also have a few beetroots that need cooking. Has anyone tried doing them in a SC?

Brought lunch to work today - and the second half of it is still there for lunch on Thursday :)
