    Thank you for sharing lovely photos. My DGD is off on a similar project next year in Peru so I am being kept bus.y helping to fund raise. It really makes you feel humble when you see and experience how little these kids have.

  • A big thank you to whoever posted the Chicken and Chorizo Gratin recipe, we had it the other night for dinner to finish off LO roast chicken and it was lovely, will definitely make it again.

    Made spag bol last night for OH and I, and did enough for dinner tonight and for another portion to go in the freezer. Will probably have stir fry tomorrow night. OH made carrot and lentil soup for lunch today and there should be enough for us both for lunch tomorrow as well.

    OH spent £5.90 on lunch on his break at work on Saturday, as he forgot the sandwiches I made for him! NSD Sunday. Fairly small spend of £4.38 on Monday at small T3sco on 2 boxes of tissues, mushrooms, and milk. Another NSD yesterday and today. Hoping for another one tomorrow as well but will probably need to do the weekly shop on Friday.

    Will update sig now, hoping to be on budget on 31st Jan, as our monthly budget goes right to the end of the month.

    For Pixie-Fairydust (and anyone else who is interested):

    Thai veg curry is really simple I'm almost embarrassed to describe.

    Chop (Julienne style) green beans, carrotts, celery & onion and fry in a little oil,
    Stir in some shop-bought red thai curry paste (you could use green but we like it hot)
    Add half a can of coconut milk to make it nice and creamy
    Serve with thai rice (if we have in or basmati/plain if not).

    This is for 2 and half people just adapt quantities/ingredients to make it your own. Occasionally OH makes his own curry paste but we struggle to find really fresh lemongrass stalks. They just don't seem to travel well.

    Indian lentil stew is OHs creative work - he makes it up as he goes along so different every time. I never knew there were so many varieties of lentil till he moved in - and I'm sure our store cupboard has them all!

  • I am seriously struggling this week, I need to just use the cash I have which after spending £13 leaves me with about £5 until Sunday! Unfortunately, this leaves me with no milk, f&v or margarine. I should manage to put actual meals together as long as I can find the time to get into the kitchen and bake. This is going to be a tough few days. Everyone seems to be doing so well I'm going to try my best not to let the side down!

    I think you're doing brilliantly! Don't beat yourself up about going a bit over as you will probably be a lot under another month :)
    At least you are having a really good try which is the main thing :)
