    [STRIKE]make stock from the remaining chicken - need to look up how to do this - not
    done for a while due to a lack of space in the freezer [/STRIKE]

    This week i need to:

    book room for holiday
    book tickets for night out
    book tickets for date night
    make Mr sort out stuff i've only been asking him to do for 5 months and am now getting stressed about :o

    Monday 28th April:~

    Tuesday 6th:

    For this week - all primary books to be re-read - can be done on train also

    Above is just a copy and paste of what i didn't achieve over the page. Whoops! Still lots to do :o :eek:

    The pots have been washed

    The washer is on

    Chicken stripped and in slow cooker to make stock ready to be frozen :D

    Just realisd i've got to merge todays list with above list too :eek: Not making lasagne. I was really ill last night so today went to the shop to get just the food i wanted to eat :( Trying not to be too hard on myself though - yes, there's plenty of food in but comfort food after being ill and as a 1 off is allowable.

    Didn't get the whole day off work so was in earlier. Colleague has just had her annual mortgage statement and was saying to me how happy she was that her mortgage balance has actually reduced and how it'll all be paid when she is 65 and how she expects i don't see much difference in my mortgage balance when the statement comes and how she thinks i owe more than she does anyway. I just smiled :)

    She downsized recently and she does owe less than me. But when she has finished paying for her mortgage it will have been over more than what was once the standard 25 years. Also when she bought her new house various work needed / wanted to be done and she took out 2 loans for this which i know she just pays the minimum on. She does not overpay her mortgage its just a shorter term left than me and a lower interest rate to and is set up to be finished for when she is 65 so it os coming down. - Oh yes the reduction in her balance? - Just over £3000 - ok so my balance is currently more, but i have reduced my balance by alot more with my additional payments :D And personally i am aiming not be paying a mortgage all my working life but that isn't something i'd say :cool: Not sure if she was trying to upset me or not - she does seem to have to personalize her life to mine if that makes sense? As in comparing, in her favour, the things she has that i don't - part of the reason i find work so draining and try not to get too involved in personal conversations :o

    Right on with the study 1 section and then on with the report - i think its gonna be a late one today :eek:

    SC would probably work quite well, 6-8 hours on low I'm guessing?

    I tend to use:

    Chicken bones
    2 onions cut in half, skin removed bar the last layer, tops left on
    2 carrots, skin off, big pieces
    2 celery stalks, big pieces
    3-4 large garlic cloves
    2 bay leaves
    generous tsp black peppercorns
    level tsp salt

    Not fancy, but pack in as many bones as you can :)

    Just checking in..that colleague of yours? just where does she get her assumptions from??! :) Too right you're ahead of the game, you're DEDICATED after all :D

    Not throwing in the job until you have a new one sounds a good idea. But just have a game plan to get out. 6 months tops?

    Thanks Ed :D Loosely followed with the ingredients that i have :)

    The chicken stock recipe Ed gave you is very close to what I use, except I don't put garlic in. I find that chicken stock does beautifully in a slow cooker - I heat mine up in a saucepan then stick it in the slow cooker overnight. When it has cooled down, it turns into proper jelly-like stock, gorgeous stuff. :) I freeze it in small blocks - actually in a silicon muffin tray - so I can chuck blocks of it into things as needed.

    What Brizzle said. Your colleague's attitude is odd but not uncommon. Some people can only validate their lives by comparing it to others. It's kind of an adult version of showing-off and it's a bit sad really. And having your mortgage paid off by 65 is hardly a towering achievement is it?

    You are right to keep your counsel and not get too involved in personal conversations. As we used to say at school 'Keep going, say nothing'. :D

    Remember to stay in touch when you move on. So you can casually drop into the conversation one day 'isn't it liberating having no mortgage? Oh, you still have yours? Never mind. I appear to be considerably richer than yow' :rotfl:.
    A positive attitude may not solve all your problems, but it will annoy enough people to make it worth the effort

    Thanks everyone - there are 'conversations' like this every day - most draining! But i am so happy i'm not in debt now and am making headway with the mortgage so i can just smile :D

    Brizzle - yep - i need to get a new job and will be dedicatedly ;) looking for one after the course - that and weight loss will be my priority :)

    p&f - yes i do get the idea that there is quite a bit of showing off going on.

    Thats a great idea :T can i check how much water i should be using please? :o i feel i had too much last time :(
