Lots of chef's do it that way. I'm assuming he chilled it for no more than an hour or two, in which case it's safe. Modern refrigerators are so much better than they were ten years ago...
If you leave it overnight in the fridge then reheating is probably still not advised.

Back from Feltham - and knackered. I need a lie-down before I tackle Afghan night, and OH has offered to bath and bed the Snow Frog, so I'm going to have a glorious nap....much enquiry having been made concerning a gentleman, who had quitted a company where Johnson was, and no information being obtained; at last Johnson observed, that 'he did not care to speak ill of any man behind his back, but he believed the gentleman was an attorney'.0

I can swim, breast stroke with my head out of the water. But I can carry on and on and on. I can only think of pud as pudding. Pud for 'spud' or potato. I didn't go through spud to get to potato, as obvious as it now is. Funny the phrases one doesn't think about origin. I suppose I don't think about potato that often!0
