What about making a quiche or two (for freezing). You can cut into portions before you freeze, so if you don't need a whole one, you can save the rest for another day. Use whatever you have to hand for a filling.0

Plenty ofdrinks are a must, and are so expensive to buy when you are out, so take whatever you like, plus extra bottles of cold water if it is hot. I used to put the bottles in the freezer for an hour before we left then popped them in the cool box and they helped to keep all the other goodies cool even though I had a couple of freezer packs in there.
Food wise I don't make sandwiches because they go stale very quickly or soggy depending on the filling. Nor do I put in cheese because it can go rubbery very quickly in a hot car.
I would go for finger foods such as:
cheese straws
cooked chicken thighs and drumsticks in a coating or without.
cocktail sausages
home made pasties of any kind
fritatta
quiche
boiled eggs
slices of ham, corned beef, chicken etc again whatever your preference
lettuce, toms, chunks of cucumber
a packet of wraps
a packet of 26p golden vegetable rice cooked up and put in a tub.
tuna pasta salad
some cakes, biscuits/cookies or fruit.
Plenty of baby wipesBlessed are the cracked for they are the ones that let in the light

Now that summers finally arrived I'm planning a picnic by the river
this week :j
Rather than the usual, crisps, sandwiches and sausage rolls, I would like to do something a little more exciting, but stuck for ideas .

HM couscous or bulgar wheat salad. HM potato salad, pasta salad, tomato and mozarella salad. Some of the supermarkets have deals on picnic items, or go to Lidl.

that sounds lovely, - what about a nice round loaf, take out the centre (wizz breadcrumbs for the freezer for use again), fill the inside of the loaf with fillings wrap in clingflim, plate on top compresses - cut into slice.
