Any ideas for picnic food??

    Frittata or spanish omelette with what you like but probably potatoes in. Cherry tomatoes, basically any veg, cheese, you could add linda Mccartney sausages or whatever if you like.

    Cornish pasties with a cheese and onion or broccili and stilton filling.

    I'm not keen on packed lunch sarnies, and find finger food easier. So we tend to go for samosas or pasties, crisps, carrot sticks and a sweet thing like cake and apple each.

    not homemade but quorn do mini scoth eggs which are very nice. The mini sausages, not so nice.

    Some are veggie, some aren't, but they should give you some ideas for your picnic. I'll add your thread to that one later to keep the ideas together.

    what about a vegeterian muffaletta? sorry i dunno the spelling?

    take a nice oval bread. take top off and keep aside, hollow out inside..... (save the bread for making breadcrumbs or panzanella..... ) layer in following order: olive oil, tapenade or crushed olives, rocket, tomato, mozarella, basil, mozarella, tomato, rocket, olive oil. Put lid back on and put something heavy on it and let it sit for a few hours. They make the best sandwich wedges when cut. hope this helps.

  • Mushrooms are always part of my veggie meals. I like portabello mushroom burgers - slice them up, saute with onion, garlic and olive oil, then place them in hamburger buns. Use condiments like mayo and mustard. Since you're doing a picnic, you can assemble the sandwhich right before you eat.

    If you like Linda Mac sausages, they're now doing mini ones which would be ideal cooked up (must admit, I don't like them but DS2 does ;) ). I picked up a tub of vegetarian 'bacon' bits from MrM - they're called salad sprinkle bacon flavour.

    I like to make a load of sausage rolls with shortcrust pastry whatever sosmix is called now & put kitchen roll all round them in a tub to protect them.

  • Hey all,

    Sorry if I have posted in the wrong section, still quite new to this!

    I am driving and sailing to Ireland in a few weeks time, and wanted to bring a cool bag with a few snacks for the long journey to avoid paying the high prices of the expensive service stations.

    does anyone have any ideas of something, cheap and healthy, and something you can eat cold?
