Do you mean the ready-made or the ground? There's a nice cornbread one, and I think I might have a muffin recipe - but not tried that. Will hunt out the corn bread.

I make polenta the way my mum back in Italy makes it - but no actual recipe in the sense of measures, weight etc. sorry.
Boil water and pour the cornflour (must be coarse) in it slowly while stirring constantly with the other hand. Keep stirring very often while it cooks. You can add salt if you want.
Personally, I put in the flour when the water is still cold and let it cook like that, stirring occasionally.
It's excellent with mushroom sauce or cheese sauce or a nice veggie stew.Be careful who you open up to. Today it's ears, tomorrow it's mouth.0 -
Hiya
I've added your query onto an earlier thread which has a few ideas and tips that might help.

Hi, there! We have an older thread on polenta. I'll add your question to it so that you can browse the thread.
I roll my pizza bases onto it to keep them crisp.

Lemon polenta cake (Jamie Oliver)
Cake
250g butter softened
200g sugar
3 large eggs
200g polenta
1tsp baking powder
Finely grated zest of 1 large lemon
50g mixed peel
Syrup
100g lemon juice
100g sugar
200ml water
A few sprigs fresh rosemary
You just make this up the cake as normal, cream butter and sugar together, then eggs one at a time, then polenta, then peel and zest. The mixture is sticky as heck though so make sure you grease and line your cake tin or you'll never get it out! It goes in a 9in spring release tin if possible. Oven at 190 or 375 for about 30-35 mins
to make up a syrup you boil the ingredients together, just keep it cooking on the hob till the cake is done, don't cover or it doesn't reduce down (I just found that out yesterday!).
Remove the cake from the tin and then pour the syrup over it. Serve hot or cold.
Anytime I've made this for anyone they've asked for the recipe. It also sounds kind of posh for what is pretty much a basic cake recipe....0 -
