Thanks Pink, I did have a look but saw nothing! Seems whenever I search for something I get random results that mention the word once in 4 pages0

Have you tried selecting "Advanced SEarch" and then searching on Titles OnlyThat's what I do in situations like this

I've got a recipe for Polenta cake...It's crunchy and moist all in one......Here goes:-
3 1/2 ozs softened butter
3 1/2 ozs caster sugar
2 beaten eggs
1 3/4 oz sieved SR flour
1 tsp baking powder
3 1/2 ozs polenta
8 ozs mixed dried fruit
1 oz pine kernels (or other nuts)
4 tbsp lemon juice
2 tbsp milk
whisk together the butter and sugar til fluffy, whisk in the beaten eggs, fold in the flour, baking powder and polenta. stir in the fruit, nuts, emon juice and milk. Spoon the mixture into 7 " greased and lined tin and levl off. Bake for about an hour in preheated oven (180/350 or GM4)........'' A man who defends himself, has a fool for a client''0 -

I've got a block of ready made polenta (wet? in a rubbery block) - I'd like to try the lemon polenta cake but do I have to cook the polenta first?

I don't think ready-made polenta is really suitable for making polenta cake - you need the dry, raw stuff for that. Ready made polenta makes really nice chips, though - cut into chunks and fry in a bit of oil, and sprinkle with salt when golden. Yum!
It also makes a nice topping for pies/stews instead of mash or dumplings - chop it into small cubes and sprinkle over the top of the filling, mixed with a bit of grated cheese if you fancy, then bake as normal until the polenta goes golden and crunchy round the edges. (I'm very partial to polenta - can you tell?)

Hi there:D, just reading through this older thread, and bumping it in case anyone can think of more uses for cornmeal.
I so far have:
the chips, the mash, shortbread, sweet dumplings, addition to pizza base and pastry, all very useful, and also we are adding it to veggie burgers.
Sadly I can't do the Jamie cake as can't use eggs...
So does anyone have any other ideas?
My ideal would be to hear recipes involving a fair bit of cornmeal, as we need to use up 4.5 kilos in a month:rotfl:
