I use the powdered type for dusting over parboiled potatoes before roasting them. It gives the roast potatoes a really lovely crunch
If making my own pizzas, I sprinkle the bottom of the tray with the polenta and then place the dough on top. It helps to crisp up the bottom layer of the pizza and avoid soggy bottoms :rotfl:
I have often used polenta to replace part of the flour in a recipe when making pizza dough or pasta dough. You can really taste the difference.

Polenta chips are great especially if you are on a diet, so low in calories and fat.
Cut the solid polenta into normal chip size pieces, spread on an oven proof dish, sprinkle with Cajun seasoning, or garlic granules, or any seasoning you fancy, spray with spray oil and cook in oven 15 - 20 minutes.0 -

I bought some once to try because it was cheap. Did sweet and savoury with it, didn't like it, wont get any more. :sad:

Hi - sorry not to get back sooner - I couldn't remember on which MSE board I had posted the question! The packet doesn't have any instructions and the only instructions for cooking it I have found were for quick cook polenta, so if anyone can point me in the right direction that would be great - although reading some people's experience of the stuff I'm not sure how worthwhile it will be!
Using it like breadcrumbs sounds like a good idea, but I have a huge bagful - could I maybe roll some chicken or fish in it and then freeze it like that?
I am loathe to throw it away but a bit mystified as to what to do with it!May spend - £291.40/£320.00
