I had numerous steaks and bits of beef in the freezer, so took them out, chopped them up and casseroled them with some beer, oxo cube and yeast extract/marmite and onions. Made a really good pie filling.  Made some for the inlaws for their freezer.

Morning food friends, need some advice. I am new to rhubarb (which grows on my allotment) and am having real difficulty not messing up any recipe i try. Last night i tried this:
Heat oven to 200C/180C fan/gas 6. In a small roasting tin, toss the rhubarb, onion wedges and garlic with the balsamic vinegar, a little olive oil and some seasoning. Roast in the oven for 20 mins. It came out a sludgy burnt mess!
Also, tried to make a gin, but it tasted like underripe fruit.
So, 2 questions: when is a rhubarb stalk ripe, and how to prevent it from becoming mush in the oven?
I know this is not quite the right thread, but it the one i participate in, so what can you do

Not much help @carinjo all I know is rhubarb is "pulled" not cut, so assume like apples only ready when it comes away in the hand.

Thanks @pamsdish, i knew about the pulling, but if it difficult, probably leave it for a bit. I have been putting some effort in my harvesting!  :#

out: 3 x lamb chops, for last night's tea. We have been living on leftovers since last Friday when son and DIL came to visit and there is still pate, part of a turkey and ham raised pie I made, plus fruit so I think the freezer can have a rest for a few more days
