Just a placeholder post, really.

The following is not something I envisaged, but it has to be done as I hate wasting anything.
I'm afraid I'm going to have to freeze most of the leftover turkey tonight. There is just too much for the two of us to consume and seeing as I reared it myself last year (2019) and knew it was entirely organic there wasn't much point in buying a small one. The other thing I'm going to have to do is make loads of cake batter - I use Mary Berry's tray bake recipes and freeze the uncooked mix in ice cream tubs. Between Christmas and New Year - also known as Twixmas in this house - I usually have unsold eggs at the gate which get given to neighbours, friends, etc but at the last count I have approx 70 to use, and there is only so many 'egg on toast' lunches I can stand.

Done a big meat shop which should last for the next couple of months - still need to buy some sausages from a different butcher. The one I went to this morning does lovely meat but he doesn't do low fat sausages which my usual butcher does and we prefer.
In: 4 small beef joints; 2 chicken; stuffed pork joint; 2 lots of chicken thighs
Out: Leek and barley soup for lunch tomorrow

Managed to dismember the turkey early this morning before venturing out. Enough large turkey pieces for three meals all tucked away in the freezer, the bones etc went into the slowcooker for stock and that's now residing in the fridge together with all the bits of meat ready for soup making tomorrow. The turkey breast which we hadn't even started to eat ended up as a casserole for tea with enough left over for another meal tomorrow.
That wasn't the end of my antics - made 6 cake batters. - 2 each of walnut/coffee, lemon drizzle, and chocolate. I did two of each because I didn't want to wash the mixer bowl after each mix -lazy? .... - 24eggs used and they are all in the freezer. Unfortunately, the hens are laying faster than I can use the eggs so I think a couple of folk I know will end up with a tray tomorrow. Eggs are going out for sale at the gate again from next Monday so that should solve the overproduction problem.
So
