  • I agree, pressure cookers are fantastic. I have great memories of when i was at school and coming home in the winter months, opening the door and being greeted with this amazing smell and just knowing my mum had made soup in the pressure cooker, it was heaven!
    I bought a pressure cooker last year, but i accidentally washed it in the dishwasher, it has tarnished so i'm not sure if it's as safe to use..
    I also remember one Christmas day when all our family arrived, my mum and grandpa were in the kitchen preparing the meal when the PC exploded!!! There was soup all over the walls, so beware everyone, i prefer to stay in the kitchen at all times while it's on, just to be on the safe side.. The cooking time is really quick anyway, i make homemade soup in 20 minutes, it's fab!

    I know this is an old post but thought I'd point out something:

    Pour in the red wine, scraping the bottom of the pan to remove any sediment (this is called de-glazing) and simmer until reduced by half. Pour in the stock and add the tomato puree. Bring to the boil and then put the lid on. When it comes to full pressure reduce heat and cook for 50 minutes.

    ..........the amount of liquid isn't just 1/2pint in the quoted recipe (as mentioned in the 2nd quote) - there's also 8fl oz of red wine in there. I think I still might check it after about 40 minutes or so though - just to be on the safe side.

    Would you share one of your curry's recipes with us? I just bought a pc and I love curries, but i have no idea how to cook one :(

  • Here you go Alisha & Skinnygirlnot. Don't be scared of the long list of ingredients and where you can, try to buy from indian grocer's (a lot cheaper than supermarket branded stuff) and its more authentic. In some supermarkets they sell Rajah and Natco products which are quite good.

    Spicy Lamb Curry

    2lb lamb shoulder cut into 1 inch cubes (I prefer meat on the bone) and I buy from a local halal butcher
    2 med onions (finely chopped)
    10 tbsps Oil
    3 cloves
    1 bay leaf
    1 stick cinnamon
    1 ¼ tsp salt
    2 tbsp Garlic Paste
    1 tbsp Ginger Paste
    1 tbsp Green Chilli Paste (or to taste)
    2 tsp chilli pwdr
    1 tsp turmeric pwdr
    1 tsp ground cumin pwdr
    1 tsp ground coriander pwdr
    1 tin tomato (blitzed)
    1 pint water

    Heat the oil, when hot add cloves, bay leaf & cinnamon, should sizzle, then add onions, stir fry on high for a couple of seconds, add salt, lower heat and cook onions until lightish golden brown.

    Then raise heat and add ginger, garlic & chilli pastes, chilli, turmeric, cumin & coriander powders, fry for a couple of secs until you see oil separate on a med-high flame. Add lamb pieces & bones if you are using, and fry until they take on a darker colour, stirring all the time. Add tomato’s, fry for a couple of secs then add 1 pint water bring to the boil

    Close pressure cooker, bring to full pressure, lower heat and cook for 15 mins,

    You can serve this with rice, chapatti’s, or toasted pitta bread

    Hope you enjoy, let me know how it goes, if u try it. Pls add spices to your liking and adjust salt, tomato’s etc

    If once you have cooked it and its too spicy, stir in some plain yogurt for a cooling effect or you can add more tomato. I do this for the kids sometimes.

    Sometimes, I add potato’s, once the lamb is cooked, I add 3 skinned potato halves/quarters (dependent on size) and cooker for a further 10-15 mins

    Hi, many thanks for sharing your recipe. I tried it yesterday night, but it came out completely liquid, it didn't look like a curry sauce at all, it looked more like a soup! I don't know if I did sometthing wrong... do you add anything to make it thicker?

    The taste was very nice :)

  • OK, not so money saving, but still cheaper than buying a ready meal! Can I use ready made jars of cooking sauce in the pressure cooker?

    I tried once before, and the sauce stuck to the bottom of the pan...

    Do I need to dilute it with water?

    I got my first pressure cooker today, from freecycle and there weren't any instructions included. I know how to use it as my mum had one and she's just given me a refresher lesson (so hopefully i won't blow the kitchen up).

    Could anyone post me then specific recipes (with timings) for pressure cookers, so i can get pressure cooking!!

    I am a TV researcher working on a programme about pressure cookers (BBC1's 'The One Show' series Flavour of the Month).
