Firstly, the trip to Brighton and the visit to France should be two separate occasions. Yes: Brighton is very close to Newhaven, which has a good and cheap link to Dieppe, but the crossing takes five hours each way so is not an option for you. And Dover is a long way from Brighton.
Secondly, check fares as foot passengers: taking a car across the water costs a lot, and you can do a lot of fun things without a car.0 -

could be a lot of hassle for a day trip, if you want to do it properly?
travel insurance, breakdown cover, hi viz jackets, beam difflectors, warning triangle, 2 x breathelizers, spare bulb kit. and a possible add on to car insurance as most insurers only give third party insurance when in eu? i'm not trying to put you off but if you were to be stopped by the gaundarmes or have a breakdown / accident it could end up being very costly0 -

I checked with my insurance company and they will cover me 3rd party too, its a commercial courier policy, and so long as its for social use, then its fine!0 -
but if you do decide to go my recommendation for a day would be le touquet about 15m from boulgne very quaint thatched cottages and a very English feel to it. a firther 10 m is abbeyville with a nice beach0

You don't need breathalysers, beam deflectors are easy to DIY with tape.0 -
