Yeah I know but the other two are temporary. It is nice to be greeted by four sets of wagging tails though.

  • I have ended up with far more celery than we can eat this week - any inspired ideas of how to use it up would be much appreciated!!

We often chop it up and boil it with a mixture of carrots, parsnips and other vegetables. Cooking it in this way dissipates that strong celery taste which some people don't like and I can heartily endorse putting a generous serving of it in caseroles, soups and stews where again it adds to the favouring.

You could wash it and then cube it (5mm cubes so that the "strings" are not too long) and then sweat it off in some olive oil until it starts to go translucent then portion it up (depending on the number of covers you typically feed - we have 9 in our house) and freeze it.

Can be added to soups and stews...

Or, our fav, as a base in the bottom of the Sunday lunch roasting dish with the other essential aromatics - carrot, onion, bay leaf or 2 and an appropriate herb and garlic mix depending on the joint. This mix catches all the juices from the joint and stops it sticking to the pan - while the joint is resting you can add a stock (water from the par -boiled parsnips works well) and flour if you like a thick gravy - this can then be pushed through a sieve to make the BEST gravy ever - any left over meat and gravy can then make Monday's soup!

There's only one thing to do with celery! Throw it in the nearest bin!!!! Horrible stuff.

Break a stick into a couple of smaller lengths and put them inside a chicken ( with half a lemon and some rosemary) then roast as usual. Makes a huge difference to the flavour. ( Doesn't taste of celery, just makes it much richer - celery does this whenever you add it to anything eg soups, risottos, stews etc)
  • Whats the best way to use celery for cooking, can you put it in casseroles?
  • I do. Apart from when my friend is coming for food...she hates it hot..lol.
