    Pity you werent near me Maddie as I could have let you have some.
    I managed to make courgette & potato soup today.
    Only other tasks achieved are a million phone calls, information sought & found, cards written & a package wrapped up ready to post.

    I had a large portion of chunky roasted tomato, vegetable and lentil soup languishing in the fridge, so I made a pasta bake with free onions and leeks from Mr M, rosemary, the soup and topped it with a sprinkling of cheese. It was declared a hit.


    A handy tip, if anyone's interested: I use a potato peeler to cut ribbons of cheese, much easier than grating it.

    Loving hearing about all the things that your are doing and all the things that you are making. Deffo makes me feel LAY-ZEE :o

    I've got to press on, as DP wants to watch the motorbike race...

    mrsinvisible - did you nab a NSD? I did :j The weather made it super easy :D

    maddiemay - I saw 'british courgettes' in mrL the other day - british marrows more like :( And they wanted £1.49 a kg for them! It's the height of the courgette season! Honestly love, jump in yer van and get over to Elaine's hoose and beanie's castle - it'll be cheaper than getting them from the supermercados :D

    satchmo - resourceful as ever :D Nice to see you - all well?

    So dinner this evening - well, it is NOT going to win any awards in the 'beauty' stakes, so you will just have to take my word for it that it tasted fragrant and lush :D I made Khao-soi noodles (vegetarian version of - normally it contains chicken) and my recipe came from 'The Vegan Cookbook' by Adele McConnell. Unfortunately, I cannot locate her recipe online :(THIS is about the closest that I can come to - and actually, if you treat it as noodles (made up/cooked separately), coconut broth and then a selection of vegetables to cook in the broth, you'll see that any recipe is far more of a 'blueprint'. I hadn't got any red thai curry paste and some shop versions have fish sauce in them, so luckily, St. Delia came to the rescue, and I made a version 'based' on her recipe HERE, I say based, as I had no lemongrass, and I wasn't ruining a nsd, not even for a saint..... :rotfl: So I used shredded lime leaves instead. So, a pic of dinner;

    Unfortunately, the broth is that 'muddy brown' colour :( because the only mushrooms I had were some frozen YS'd Portobello mushrooms, that I'd already cooked down, so they went in 'black' and instantly coloured the coconut broth that attractive shade...... :rotfl:I have added donated courgettes, yellow and green and the French beans are the last of the donated bundle. The noodles were on special in the freezer centre - sh*rwoods brand, 2 packs (containing 2 sachets of noodles) for £1 (and I used 1 pack for dinner). The dish is topped off with roasted cashews (valoo) and toasted sesame seeds. And yes, we did eat most of the dish with chopsticks. Dinner was an extremely quiet affair and the tablecloth is showing the evidence of our proficiency with chopsticks...... :whistle:

    Today I am grateful for these 3 things;

    for a lie-in

    for DP's hard work and persistence - he really cracked on today

    for the fact that my culinary musses were at least edible..... :rotfl:

  • LOL - if only you both had checked out the Greying Towers webcam you would see that I have been practicing procrastination, dawdling and lolling with the zeal more normally associated with the dedication of an Olympian! :D :rotfl:

    I have just made some shortbread (too thin) and some scones (too thick) and I'm just waiting for the tomato soup to cook up, and to probably find that I have made it too salty or summat! :rotfl:

    Meanwhile, DP has been cracking on like the trooper he is, putting the house back into some sort of order, following last week's tradesperson episode. No mean feat when you're dealing with a house with no straight edges .............. :D

    Don't feel like doing much of anything today :( Need some OOMPH from somewhere :D

    Went the day well for you Dear Reader? Mine has been pretty fabbo, I can't claim a NSD, but I think that I got flirted with in the queue in mrW, so I've had a laugh at least........ :rotfl:

    Igamogam - thank you, you've reminded me to look whether mrS has veggie friendly parmeasan back in. Last time I thought about getting some of the basics range, they had supplier issues and couldn't supply the veggie-friendly stuff. I haven't looked since..........

Following on from the launch of your 'Skinnie McSoftie' TM range of skincare products - especially for the frozen north - last week, surely there is room for a range of 'Thinnie McShortie' TM regional biscuit wares???? :D:D:D Seen as it's you, I'll got halves on the royalties; but can we use the oven at your house? as I can't afford to put mine on.... :rotfl:

    So I spent money today, as I sent the condolence card off to the spouse of my mentor who passed away. I have to report, that a) the PO was quiet at lunchtime :j b) even though I got one of the 'sour pusses', they were most helpful and agreed to put an actual 'stamp' on the envelope, instead of one of those silly bar-code-esque type stickery things :j and c) the stamp was a lovely Commonwealth Games one :j :D

    My shopping from mrW consisted of all YS'd things - I was :j - the mrW 'associate' was less so....... :rotfl:

    Oh, and psst, dunna tell Pippi, but I also bagged 500g of sushi rice from HB......... for 49p........BBE Jan 15............. :D

    So, dinner this evening. I trotted out an 'old favourite'. Greek style casserole. Not many pennies, mostly store cupboard ingredients, I added in a generous serving of runner beans each ('coz I had 'em :D) and topped with a boiled egg (feta out of reach of the budget, this early in the month, although we're doing fine on the £ front...) and the last of the capers out of the jar I got from HB :D Picture here;

    And if you're interested in making the Greek Style Casserole, the recipe that inspired me can be found HERE it has meat in it, but I substituted continental lentils in for a veggie version.

    Today I am grateful for these 3 things;

    food items that were on my list were YS'd :T

    that DP was mildly jealous - when I told him about my flirtatious encounter..... :rotfl::rotfl:

    that the sun shone today - it made the face full of grit everytime you stepped outside the door, so much easier to bear..... :rotfl::rotfl:

    Not sure if you have seen this GP, but Sainsburys do a basics 'Greek salad cheese' (AKA feta) for about 79p. Not sure if it is veggie friendly though (?)

    Mr t's version is veggie same price valoo. (just checked in freezer - they might (heaven forbid) be made in the same place).

    DawnW - Bless You! You are so kind thinking of me :D I didn't express myself at all clearly, I'm sorry. I have used the very cheese to which you refer :D I have also used the mrA and mrT versions of it :D I actually have one pack of the mrT version in the fridge at the moment :D Sorry, what I meant (it all made sense in me 'ead :D) was that an egg is cheaper to 'top' this particular dish, than feta, as you only need 'some' feta, not the whole packet. I'll save my 'feta budget' for a dish that needs the whole packet - like if I was making cous cous salad, or pasta salad with it :D With an egg, I get the protein, it tastes ok/works well with the spinach and other ingredients and comes in handy portion sizes :D
