Any rice is fine for pudding - I draw the line at quick cook stuff though, I think it's vile. You could use basmati as there are a number of indian rice recipes that are sweet, and the scented basmati adds to the flavour. If you like mild indian spices you can add a bit of cardomom to your rice pudding, it gives it a lovely exotic twist. I always add bay leaf to my rice pudding and some nutmeg. Coconut milk or cream is nice as well, and I have never had it but I bet the almond milk would work too.
Your tins would be fine Fuddle, the recipe I use is for little pies for eating on the hoof (Low carbers often have trouble finding suitable food when out and about) so the deep ones keep them a bit easier to eat.Think big thoughts but relish small pleasures0 -

About to catch up on the SHTF thread as I suspect I'm going to be very interested in the last few days discussion... I just need a cuppa and to usher some children out into the garden.
I've rushed a bay leaf into the rice pud MrsC, it maybe too late to infuse but worth a try. I haven't relised that it was such a sweet smelling ingredient and only ever used it for savories. Shame I can't eat it! Bah humbug, rice isn't primal but children will like it.
Also, a use for the rest of my coconut milk! I'm left with too much for my meals (its allowed primal) if it doesn't go into the rice pud can I freeze leftover tinned coconut milk?0 -

My dad had a shunt to drain the excess fluid from his brain, he had hydrocephalus; I had to test the shunt twice a day to make sure it was working correctly.
It wasn't a major thing just felt weird the first few times of doing it.My self & hubby; 2 sons (30 & 26). Hubby also a found daughter (37).
Eldest son has his own house with partner & her 2 children (11 & 10)
Youngest son & fiancé now have own house.
So we’re empty nesters.
Daughter married with 3 boys (12, 9 & 5).

We are going to Durham Cathedral this afternoon. Ds2 is singing in the cloisters. they are doing a concert for the arrival of the Lindisfarne gospels tomorrow. I hope the rain keeps off as it is looking quite grey outside.

Fuddle - with rice the trick is to cool it as quickly as humanly possible and then put in the fridge, when you heat it up (if not eating cold, my DH thinks cold rice pudding is the best!) then again you need to heat it as quickly as possible and get it to piping hot. Technical details - The particular bacteria in rice are spore forming, this means that when they get to normal cooking high temperature they form a hard shell around them selves rather than dying, likewise when fridge cold they also hibernate. The trick is to limit the amount of time spent in the middling temperature area when they are active and multiplying in order to keep the numbers as minimal as possible. This is why if you get a dodgy tum after a takeaway it is most likely the rice - being kept warm while being delivered/taken home is the worst temperature for rice. Hope I've not put anyone off!

You must be proud...I was going to go to Durham, market and some kind of enactment of medievil fights but too late now, think the rain has held off even if its dull and breezy. Would like to see the Gospels and may still do so but wonder how much there is to see and its £7.50 for a ticket.

Fuddle what a good idea, I have lots of powdered coconut milk from Approved Foods and DD has gone right off curries, so rice pud would be a good use for it. Perhaps I need to write down all the contents of my bulging garage pantry to get it used up. Couscous anyone?0

Such a lovely day and I've managed to sleep though half of it. I really can't sleep these days until my brain shuts down through shear exhaustion and consequently fall asleep at about 5 and wake up about 11 managing to drag myself out of bed at 12:o
By the time I've sorted myself out and consumed coffee and fed the cats etc I seem to need a rest again. Not good when your supposed to be the carer:o
Today I am determined to cut the lawn and do a little planting. I love mixing earth, compost and water in a big bowl ready for my pots. Its the feel of it, so tactile and grounding. Is it a childhood mud pie memory kind of thing hidden in my subconscious I wonder.
Right off to get some breakfast.

DH took DD for a driving lesson this morning and someone drove into the back of the car while they were at a roundabout :eek:
Fortunately nobody is hurt but we need to pay for the repair then claim it back from insurance so hassle we could do without - just glad it was not worse.Glad no one is hurt.
If you want a laugh, I was about 10 days away from my driving test, on the road outside the test centre, in the driving school car, when some fool rear-ended me. All their fault btw but we had to pull into the test centre's carpark for the other driver to exchange details with the instructor and there was me thinking Beam me up, Scotty. :rotfl:

I have been to a bootsale (deep joy) and also been allotmenteering (deeply sore back). In a day or two there might just be a strawberry for tea, only about a month later than last years.

Possession - ill swap you some couscous for some,........errrr....more couscous? Seriously how did I ever think we'd eat it all. I must have over 100 packs left....but hey it was cheap and will get used (can you use it as grit in the snow do you think? Lol)
Our council only let you pay over 12 months if you have a low income which is daft. Luckily we got ourselves into a position where we can pay it in full each year when the bill comes in. Whilst I appreciate it's not MSE to do so (10 interest free payments versus the money in the bank earning interest) it saves me thinking about it and takes the pressure off finding it each month. Every year I save any "surplus" money from fleabay sales etc towards the next years bill, then just top it up here and there. It also means its a bit of a fall back emergency fund shoul I need it before I pay the bill, which I can then go back to installments should I need to.
Just went for a lovely picnic in a local park, silly hot but we stayed in the shade. On e drive home we went via the coast road which was under a blanket of swirly, twirly sea fog which dropped the temperature (according to the car) by 12 degrees."Start every day off with a smile and get it over with" - W.
