    Lemon Curd Cake
    100g margarine
    75g castor sugar (i use granulated)
    2 eggs
    175g self-raising flour
    1 jar lemon curd

    Heat the oven to 180 degrees. Grease /line a loaf tin
    Mix all of the ingredients in a bowl and mix together till binded.
    Then pour the cake mixture into the loaf tin and level the top so its straightish.
    Place in oven and bake for approximately 40 minutes until browned.

    Oh dear another blocked post...no smiley's were included...will try again later. Good to see a more positive feel to the thread as the day has gone on...had to buy some fresh food(I was out of it all)or had not used everything. Spent too much but the bargain was approx finding £18's worth of sandwiches and meat for...£1.

    I can't just now Jem as at MIL's house and on phone but when I get home ill find it for you, no problem.

    Is that in Tesc0 pops? I'm hopeless at finding knocked down priced items.

    Baking cakes? How can I prevent cakes burning round the edges? The edges burn while the insides don't cook. I produce substandard cakes time after time.
  • These cakes look lovely. I don't have any dried fruit but I've pinned the link for the tea loaf. I think I'll do some muffins tonight. I'm going to roast some peppers for later in the week/the freezer, so the oven will be on anyway. Wasn't going to roast the peppers but fancied some baking so have just moved that right up to justify the oven. Will save me time later in the week anyway.;)

    I've managed to finish the cushion cover while I was on here earlier and have just ironed the curtains for the dining room. We haven't needed them since we moved in, but want to get them up before it cools off. They aren't the warmest, but they'll be better than nothing, and I already own them:D We'll see how chilly the room is and if it is a problem I'll think of a solution then.

    Fuddle, a few thoughts--your oven might run hot. The last rental I lived in, the oven was about 75c hot. An oven thermometer might help with that. It could also be the baking tray. I think if it is dark you're supposed to reduce the suggested temperature by about 15 degrees. HTH.

    Meant to say--cakes are particularly fussy about temperature (I find) next time, if it starts to happen that way you can take the cake out, wrap foil around the edge so it hangs over the part that is cooking to fast and put the cake back in. It isn't ideal and the cake may fall, but it does work in a pinch sometimes.

  • AOT Ginny and Kez sorry about your upsets. I have lit a candle and I am sending positive thoughts your way.

    I know I do not post much these days but I do read as often as I can. As a family although things are still tough we are through our worst time and the support I had on this thread (no matter what the name of the thread was at the time) was invaluable. I suppose that I feel that as I am not on here every day my comments may seem a bit familiar for an occasional poster.

    I have podded peas harvested from the lottie today and have 11/2 lb for the freezer, I have also prepped 7lb of french beans from the lottie as well. We have also harvested the last of the early potatoes.

    I have made a lasagna for tea but have replaced the pasta sheet for long strips of marrow. It is ready now so I had better serve it up. No surprise but we are having french beans and peas with it :D.
