Vegetable hot pot with cheese triangles
2 tbsp veg oil
2 garlic cloves crushed
1 onion chopped
1 tsp chilli powder
450g potatoes chopped
2 large carrots chopped
1 medium turnip or swede chopped (450g)
1 large leek chopped
4tsp plain flour
600ml veg stock
1 can of tinned tomatoes
1 tbps tomato puree
400g cooked kidney beans or 1 tin of kidney beans
salt / pepper
cheese triangles
115g butter or margarine
225g salf raising flour
115g cheese grated
5tbsp milk
Heat oven to gas mark
Fry onions and garlic in oil till beginning to brown
Add all the veg and fry for about 3 minutes.
then stir in the flour and cook for about a minute.
Then stir in the stock, tomatoes, tomato puree and seasoning.
Bring to the boil and cover and cook in the oven for about 30 minutes.
While its in the oven make the cheese triangles.
Rub butter into flour, stir half the cheese, seasoning and enough milk to make the dough.
roll out dough to about 2cm thick. Cut in triangles and brush with milk.
Take casserole dish out of oven and stir beans into the casserole. Add the cheese triangles and sprinkle the cheese over them.
Place back into the oven uncovered for about twenty minutes till triangles are golden brown and puffed up.0 -
sorry hun, didn't mean to ignore you, just finished typing out the veg stew recipe.
I would cook first before freezing it.
I did it other way round before and it didn't have the same same consistency. bit more like a sloppy pate.
But i have batched cook them before and they worked really well.
Oh and i've done toasties with the meat loaf too. Just treat it like sliced ham / cheese.

Kezlou, these are both really brilliant recipes! Exactly the sort of things I was looking for. I feel so much better now, I've got both copied down and have made a note to pre-bake the loaves (perfect, saves on oven usage!)
I love to cook, really find it relaxing but really had a wobble as I'm a little anxious about how busy next term will be and didn't know where to start. Thank you all. I've slotted some things in for next week's meal plan and will put a few more in the week after--particularly as I expect the leeks will be about soon enough.
Ginny, I admire people who have to think carefully about diet for health reasons. There are so many things that I think are important and trying to prioritize is never easy--especially as "they" can never seem to agree on what is best for us humans to eat throw in long term health concerns and it only makes it harder! Not to mention trying to do it all on a budget!:eek:0 -
Afternoon everyone!!! Nice and sunny here in Lincolnshire. OH and me and youngest dd have just been to wickstead park. No idea where it is, but OH drove!! Love day out for anyone, there is a park for littlies and a train that goes around the park.
Just to report I have tried my own variations on the lemon loaf recipe that was on here recently, I did strawberry jam and then another with marmalade. Both I can report are nom nom nom !!!!! Strawberry jam cake was a tad moist compared to marmalade, and after a day was delicious.
I have a recipe for a tea loaf cake, involves soaking mixed fruit in a cup of tea overnight but is delicious. I can post if anyones interested.

Ginny small mercies all right. I worry that instinct would have you trying to rescue and I dread to think what would have happened to you.
I'm staying up at MIL's tonight. I needed to get out the house to a comfy safe place. I can chill in my pj's here supping coffeeGirls with me too. DH clapping his hands at the peace. MIL told me she's applied for a job in McDonalds. She's 61) She's worried that her daughter will be cross with her for getting a job (if she gets it) but DH told her that we all know they are struggling and told her quite sharply that his sister should be paying MIL a little to help out as she is helping her out by saving her hundreds a month. Guilt is awful, especially when those on the outside can see there's no new to feel that way.

It's a very thick sustaining vegetable dish, a cross between a hearty soup and a stew, it usually has beans or peas in it and a grain and lots of herbs and veg. It was the staple fare of medieval Britain and it's just what you need for lunch on a raw January day!!! I'll post some recipes when I'm back at home and you can have a play and see if you like it!!! Afternoon all we have just had a large gamon joint for dinner followed by trifle.
I was thinking I could make ham and cheese pastys like what they have in greggs so my question is do you think it's just cheese sauce with gamon chopped in????
Allso please can you post the lemon cake recipes iv surched but can't find it

That last post didn't make sense. MIL looks after her daughters little girl every day.
We're talking about coffee liquer here. Does Lidl also do a knock off version of Tia Maria?
