Oh Lyn so many brilliant ideas already. I'm quite good with risottos but never knew they could be frozen--I've one schedule for next Saturday so will just double that up and get one in the freezer. I'd love some veggie lasagne recipes. I have one that uses grated courgette (I know it is a dirty word at the moment!) but was afraid it would go soggy so any ideas on that front welcome! I've got several recipes for dahl I shall dig those out, but I'm not very experienced with veggie curries so those would be helpful. Please, the African beans in peanut sauce sounds perfect! We both LOVE peanuts and I think that will definitely be a favourite.
ISBN numbers are very helpful. I'm a public library member, but I can also request books from the British Library from the Uni so as long as I've got an ISBN they can usually find it (for once my career has VERY practical uses!). There is a £2 fee, but it is much cheaper than buying the books and I can always just copy out specific recipes.
Thank you so much!0 -
I'll have to hunt down the recipe books for the veg stew, looks like i didn't put it on the grocery challenge.
won't be long just going into the garage to find the books out x0 -
Kezlou, children can spot a rotter faster than adults, and with all their problems its amazing how gentle and kind they were with you. It sums your kindness up that you took time to send your thoughts to me, indeed a lot of people on here are so generous of spirit when they have lots on their plate. I admire that.
AOT early days with a stroke hunny, they can do amazing things to get people back to approaching normal. Its scary but there is hope.
Off to follow Mar's orders and wander the garden picking some veg and thanking the gods that we are all ok because if I had been outside when the dog attacked I probably would have been in a mess now - grateful for small mercies. Its a lovely breezy cool day here, just how I like it!
Fairyp hope you sort out your food dilemma, it is important that you are both happy with your diet. I have to work hard to feed OH a good diet for his health and know how time consuming it is working out what is right and wrong. xClearing the junk to travel light

Kez, I've got that penned down. I've also book marked the post. It looks absolutely perfect. Would you suggest freezing the mixture before cooking or freezing after it is cooked? It looks as if I could easily double it up and make several at once.0

FPK if you want to make courgette dishes that aren't soggy, grate the raw courgettes and put them on a big shallow dish with a really good sprinkling of salt and leave the for an hour or so which will degorge them and you will have lots of juice in the dish. Tip the lot into a colander, give it a rinse under cold running water and them tip it onto a clean teatowel, roll it up and ring out as much liquid as you can. What is left is dry useable courgette that will absorb liquid from the dish whilst it's cooking, not add liquid to it!!! Cheers Lyn xxx.0

Ah, excellent advice Lyn! That courgette lasagna was a big hit when I made it before so freezing it should work well with that trick. Thanks.x0

For warm lunches why not make some bean chilli and have it with a jacket potato?

For lunches, I like quiches, which can be eaten hot or cold and and lots of soups and salads. I've been waiting since the spring to try this one:
