    I have lost my SC Christmas pudding recipe, so if anyone has one I would be very grateful please.

    I am planning on getting my pudding, and my Christmas cakes made this week if possible. I need one large one to cut into individual cakes for the teachers, two to cut into smaller family gift cakes and then a smaller version for us. Effectively it will mean my oven will be unavailable for general use for a few days, so I need to plan meals very carefully.
    Hopefully getting them all done now will mean I am not panicking just before Christmas :)

    Hope it's ok to join in the conversation, I've been reading the thread for a while and enjoying getting lots of ideas from you all :)

    Mardatha, I made this fruit cake last year and it was lovely - really moist. It only has 3 ingredients and I worked out it costs about £2.65 to make! The recipe comes from a cook book I got last year where all the recipes have 4 or fewer ingredients. You will need 1kg mixed dried fruit, 750ml fruit juice, 525g SR flour.

    Soak fruit overnight in juice. Next day, stir in flour and mix well. Put mixture into 22cm, lined cake tin and bake at 125C for about 2 1/2 hours. (Mine took about 3 hours). Keeps in an airtight container for about 3 to 4 weeks.

    Wow that cake sounds nice! I think I may try that with half the ingredients, DS does not like dried fruit either. Do you think it would work with a smoothie instead of juice? I have a job drinking a litre carton on my own would use it up.

    I just subscribed to the new Make do and mend thread anyone else but floss seen it.
  • Nursemaggie, I'm not sure, I've only made it with orange juice. The juice just plumps up the fruit and adds sugar/sweetness so maybe smoothie would do the same? It's worth a try I think :)

    Thanks everybody - so much! The RV is diabetic and I can't eat shop cake as it sometimes makes me sick, I don't know why.

    Mrs Lw I am enjoying your lentil and carrot soup recipe but I added garam masala after sweating the veg and its luscious.

    You are all just cruel I am on low carb so no cake for Ginny :rotfl:but if I make it for Oh I can treat myself to one slice.

    Pooky I just love shopping like that, nothing better than almost free shopping. Fuddle well done to you too, lovely treat for your beautiful girls.

    Im off to do my free shopping at Tesco online now :j thank you Sky, I still have money in the bank this weekend. Its going to take me ages to make sure I get the best for my money.
